Spicy Sausage and Rice Casserole

Reviewed: Sep. 26, 2011
Tasted just like a stuffed green peper, however the pepper was chopped up and mixed in. I used minute rice and let it simmer, covered on the stove for 8 minutes (until rice was done). Then moved it to a casserole dish to blend the flavors more. Baked on 350, covered with foil for 15 minutes and then uncovered for 10. Served with garlic bread.

Baked Teriyaki Chicken

Reviewed: May 3, 2011
I made the sauce as the recipe is written and poured all of the sauce over the chicken prior to baking. Then I baked 6 boneless, skinless chicken thighs at 400 degrees for 30 minutes covered, then uncovered for an additional 15 minutes. Turned out fabulous!!!

Scallop Scampi

Loved it! I added mushrooms and shrimp as other viewers recommended. And the sauce definately needed corn starch.

Stuffed Green Peppers I

Reviewed: Aug. 12, 2010
I couldn't give it 5 stars because I used ground hot sausage (it's all I had). But it was amazing!!!! Not sure if it would have been as good with regular ground beef.

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Dec. 18, 2009
Just ok. The recipe would probably get 5 stars if it included thigh meat as another reviewer wrote. I thought that it was a bit dry and needed some more fat.

Spinach Stuffed Chicken Breast

Reviewed: Aug. 11, 2009
I have made this several times because my husband likes it, however, I only had reduced fat sour cream which takes away from the flavor. So this time I substituted a 1/2 cup chuncky blue cheese dressing. This definately made it a 5 star recipe!!!

Pico De Gallo

Definately add FRESH lime juice (I used 1 whole lime). Stays good for up to 2 days...if it's not gone in 30 minutes;-)

Chicken Puffs

Reviewed: Mar. 3, 2009
Would have been a 5 if it included these changes...no butter in mixture, before puting them in the oven brush with melted butter and sprinkle california style garlic salt over top, and finally garnish with green onion. Mmm, mmm good!

Pumpkin Roll II

Reviewed: Feb. 3, 2009
I have made this a dozen times and it is very well written as is. Just don't go light with the powdered sugar on the towel. This ensures that the cake will seperate without sticking to the towel when unrolling. It also freezes well so you can make an extra one, freeze it and enjoy it a month or two later!

Apple Crisp II

Reviewed: Jan. 21, 2009
Very good, but I made a few changes the 2nd time I baked it. Mix all ingredients as directed FIRST and cover them. Then, core, peel and slice the apples to prevent them from turning brown. Definately double the oat mixture as many other reviewers recommend. Finally, bake in a metal pan and cover...this ensures a more even bake. The first time I ended up with apple sauce on the edges and raw apples in the center. This recipe is a 5 star with these adjustments!

Buffalo Chicken Dip

Reviewed: Jan. 8, 2009
Very good. I followed the advice of many...I used 1/2c ranch and 1/2c blue cheese. I also cut down on the buffalo sauce and added original red hot as the buffalo sauce was not spicy enough. I used rotisserie chicken and added some celery.

Banana Pancakes I

Loved 'em!! I followed many reviewers suggestions and added 1/2 tsp vinilla, and 1/4 tsp cinnamin. I also found the suggestion of mashing the bananas in a ziploc bag very useful.

Pumpkin Pancakes

I love pumpkin flavored everything, but these pancakes are the exception. I followed the original recipe to a 'T.' They are very rich and filling and lack in spice.

Slow Cooker Chicken and Dumplings

Reviewed: Sep. 2, 2008
I put partially frozen chicken in the crock pot at 12:30 along with all other ingredients, including a bag of frozen mixed veggies and 1 cup water. I shredded the chicken and added the biscuit dough at 4:30 and it was ready by 6pm. The chicken was tender. Will definalely make it again.

Aussie Chicken

Reviewed: Feb. 20, 2008
This recipe is so simple and the results are excellent! I loved the marinade and I will probably try it on plain baked chicken, without the bacon, mushrooms and cheese to lighten it up a bit. Also, I used canned mushrooms and they worked just fine.

Whiskey Cake I

Incredibly moist and very good. It could use some type of light glaze over top just for appearance. If not just serve it pre sliced on a nice plate.

Shepherd's Pie VI

Reviewed: Feb. 1, 2008
My family loved it!! I followed some of the suggestions with regards to the meat. I added more ketchup, 3 Tbsp worcestershire sauce and a little more broth. Without that, the meat would have been very bland. We also topped ours with Tobasco sauce to add a little kick. Overall, best shephard's pie we've had!!
