PANCAKE WEEK!

Allrighty People. I've started Pancake Week early so this is the schedule for my household:

FRIDAY, FEBRUARY 20:
Chocolate Chip Pancakes
These were good but really sweet. The syrup was a good medley of flavors and Josceline had alot of fun placing the chocolate chips on the them and cooking the pancakes. A MUST TRY WITH LITTLE KIDS BUT ONLY FOR SPECIAL OCCASIONS!
 
SATURDAY, FEBRUARY 21:
Norwegian Pancakes - Pannekaken
These were AWESOME! I've had problems with crepe like pancakes falling apart and I've have to say these held up their shape very well. No chilling in the refrigerator, no scrapping the pan when trying to flip over, the pancake withdrew itself from the pan, and no cracks or breaks. A MUST TRY FOR THOSE WHO HAVEN'T USED THIS RECIPE!
 
SUNDAY, FEBRUARY 22:
Sorry. I didn't make pancakes today. I had a migraine all day Saturday. It went away and came back early Sunday morning.
 
MONDAY, FEBRUARY 23:
Chunky Monkey Pancakes
I made these with my daughter today. She had a 2 hour delay so she really enjoyed adding extra chocolate chips while the pancakes were cooking. Also, I blended the pecans, milk, and banana in the blender so my 1 year old could still eat the pancakes. Not as "chunky" but still very good.

TUESDAY, FEBRUARY 24:
Todd's Famous Blueberry Pancakes
I used fresh blueberries and didn't refrigerate for a hour. The pancakes were fine and tasted great. Served them with Boysenberry Syrup.
 
WEDNESDAY, FEBRUARY 25:
German Pancake
These are to die for! I was really worried about the syrup so I only made half of it. To my surprise, the pancakes tasted divine with the syrup. The vanilla extract really covered up the sour cream/spoiled milk taste of the buttermilk. So good even my husband ate breakfast.

THURSDAY, FEBRUARY 26:
Oatmeal Pancakes II
These were really good. I did half the baking soda and baking powder. Also, I added pecans while I was blending the batter and added pancake syrup and halved pecans before serving. Really good. I wonder if I could use Quaker Oats Oatmeal and make different flavored pancakes? Hmmmm.....?

FRIDAY, FEBRUARY 27:
Buttermilk Pancakes II
These are very good. If/When I have extra buttermilk, I will definitely make these. Also, I made the recipe as is for the first 14 and they turned out great. For the last 4 pancakes, I added some vanilla extract. I don't think it made much difference so this recipe is GREAT AS IS! Maybe scaled down to 4 servings for the next time my family of 4 makes this recipe.
 
SATURDAY, FEBRUARY 28:
Sunny Pancakes 
With the recipe as is, I was able to make 8 smaller pancakes. This was a very good and refreshing end to Pancake Week. I didn' use as much orange zest because I'm not a big fan of the powerful taste. Other than that, I made as is and it tasted so good.

 
By next Saturday I'm going to be so sick of PANCAKES! This is a tentative plan so it may change. Also, alot of the pancakes will be altered. I'll more likely replace alot of the butter with applesauce and reduce the oils, salts, sugars, and what ever else I run across that just seems too much to make them healthier. I would like to thank you all for those who replied to the posts for recipes. Thank you again. :)

Can I spend that week at your house???? I hope you like the Chunky Monkey Pancakes (especially since it is my recipe)! ;) I really LOVE the Oatmeal pancakes ( I used skim milk ) as I did on the orange pancakes, as well. The orange ones are thinner pancakes, but good for a change. I plan to try the Truck Stop pancakes soon, they sound like a winner!

I'm more than positive that my family will LOVE your pancakes. COME ON TO MY HOUSE! No. I'm really excited to try so many wonderful recipes. My daughters will have a kick these following days.

I made another pumpkin pancake recipe last week and have some left in the freezer. I'm not sure exactly what to make the last day. Now that you remind me, I was hoping maybe "Norwegian Pancakes - Pannekaken" because I remember one of the cooks of the week was an Alaskan male and they had that recipe recommended. I should make those to give other countries a try. And yes. The pumpkin pancakes I made were really good with warm maple syrup, pecans, and walnuts. So good and warming on these cold snowy mornings.

Josephine, I just tried the Absolute Best Pancake Syrup recipe from the site this morning and it was AWESOME! I just thought I'd mention it in case you are looking for a change in syrup. (and preservative/artificial stuff-free, bonus!) Your schedule looks great, let us know how the Chunky Monkey pancakes turn out!

TO wrigleysmama: I've never heard of putting peanut butter on chocolate chip pancakes. That is something I'll have to try next time I make those.

TO carrie_cooks: I've been wanting to make the Absolute Best Pancake Syrup off Allrecipes but have been waiting to get all my syrup eaten. We bought a HUGE 1 gallon bottle of syrup at Sam's Club and I was really wanting to finish all of it before making my own syrup. When we do, I will definitely try making it to lower our preservative intake. Thanks!

About Me
Hi. I'm JOSEPHINE aka SPITFIRE FOODIE and JOSEPHINE ? FOOD. I am a 28 year old SAHM, Army Veteran, and Military Wife. In a nutshell, I was born in the Philippines, moved to the States when I was 6, grew up, joined the Army and served as a combat medic, have moved around a lot, met husband, married, and now reside in West Virginia where my husband is stationed. I have 2 children. Josceline (6 years old) and Lindsay (3 years old). I've always worked in the medical field and was going to school for my nursing degree but that has taken the backseat until my younger daughter starts school.
My favorite things to cook
Almost anything but desserts. I believe desserts are evil and are the devil's way of making me fat! Other than that, I've been leaning towards cooking a TON of Barefoot Contessa recipes and a lot of AR recipes.
My favorite family cooking traditions
With my kidlets, I like to cook with them. With my family growing up, we had no cooking traditions.
My cooking triumphs
Josceline's 5th Birthday Castle Cake. It was HUGE with homemade towers. It took 3 full days and most of the night. Everyone was so amazed that nobody wanted to eat it. Almond/Chocolate Bark Butterfly Cupcakes from Pam's blog. I made 60+ large butterflies that had to be "painted" so it literally took all night/morning and about 8 hours more to finish the butterflies and cupcakes.
My cooking tragedies
Tons and tons of it. The most memorable was the time I was sanitizing Josceline's baby bottles with boiling water. I fell asleep and woke up to a horrible smell.
