Fresh Southern Peach Cobbler

Reviewed: Sep. 6, 2013
Best peach recipe for this summer!!! My oven runs hot so down to 25 minutes. Did not change any proportions and mixture of brown and white sugar was right on. Perfect with a scoop of butter pecan ice cream! Thanks aeposey

Slow Cooker Stuffing

Reviewed: Oct. 13, 2009
I rated a 3 as if I made as written it would have been way too wet and would of had a 1 star. Way too much chicken broth for 12 cups of dry bread. Five star for the flavour and addition of mushrooms was great. I added additional fresh herbs as we really like a flavourful dressing. My husband said it smelled like thanksgiving when he was mixing it up. I doubled the recipe, and mixed 3 eggs and broth to about three cups for the entire batch. I did use all of the butter. My pot is pretty hot so a total of 4 hours on low and I stirred every hour and kept the lid off for the final half hour. Would leave it off longer next time just to drive off a bit more moisture.

Spinach Tomato Tortellini

Reviewed: Sep. 21, 2009
Made one small change and added a bag of prewashed spinach. I forgot to chop it but was fine. This is a great recipe and will certainly use it as a base. Sauteing some mushrooms for the sauce or adding peppers or otehr veggies. Also try to use milk as I usually don't have cream in the fridge. Only one kid didn't love it, but he is not a fan of tomato cream sauces, but he ate it as in this house its "eat what the cook makes or go hungry".

Buttermilk Pancakes II

Reviewed: Feb. 25, 2009
What is Shrove Tuesday without pancakes and this is the best recipe by far. Made these exactly as written and the pancakes were over 1/2 inch high. It was hard to try and spread, so left them quite thick adn turned down the temp a bit. Hard to judge when to flip, as compared to thinner pancakes. I have 3 men (2 teenage football players) and for our family of 5 this was a perfect batch size. Don't usually buy buttermilk as I never aquired the taste for it, unlike my Irish father, so to tip the hat to Grandpa, we'll add to our favorites.

Spaghetti Pie III

Reviewed: Jul. 25, 2008
No more layering lasagne for me... this was the best. I admit that I made some changes based on what I had on hand. Chopped and fried a large onion and fresh garlic with the purple (no green) pepper. Set aside as browned the beef. Instead of jarred sauce I added a 28 oz can whole plum tomatoes, about 1/3 cup water, and a handful of fresh chopped basil to onions/beef. I used ziti (no spagetti) and tossed with 1 egg, a knob of butter, and a handful of grated romano. For the cheese layer I used a sour cream, whole package cream cheese (bought a case of close to date on sale and froze it) and added about 1 1/2 cup cottage cheese I had left in the fridge. No cheddar, but used provalone on top. Did not cover in the oven. Let sit about 10 minutes before serving. Almost all gone as husband and 2 teenage football players went for seconds. Served with simple tossed salad and fresh bread, will make again!

Bavarian Style Meatballs

Reviewed: Jan. 24, 2008
I made the recipe as given and I found it a bit odd in texture, I would give it a 3. Next time I would brown/bake the meatballs to get a bit crispy. The rest of the family thought that they were great and had them as hot meatball sandwiches and on hot pasta.
