No more layering lasagne for me... this was the best. I admit that I made some changes based on what I had on hand.
Chopped and fried a large onion and fresh garlic with the purple (no green) pepper. Set aside as browned the beef. Instead of jarred sauce I added a 28 oz can whole plum tomatoes, about 1/3 cup water, and a handful of fresh chopped basil to onions/beef. I used ziti (no spagetti) and tossed with 1 egg, a knob of butter, and a handful of grated romano. For the cheese layer I used a sour cream, whole package cream cheese (bought a case of close to date on sale and froze it) and added about 1 1/2 cup cottage cheese I had left in the fridge. No cheddar, but used provalone on top. Did not cover in the oven. Let sit about 10 minutes before serving.
Almost all gone as husband and 2 teenage football players went for seconds. Served with simple tossed salad and fresh bread, will make again!
