About this Cook
I am recently “single” and no longer have to cook from a jar or a box. Now I get to enjoy the cooking I really like. I am a mobile disc jockey and my website can be found at www.mgdj.net I have been DJing for nearly 30 years and yes I have done radio! I live in Northeast Michigan and I enjoy hunting, boating, fishing and sharing a glass of wine with good friends. All of the wild game I hunt, I process and cook on my own.
My favorite things to cook
Most of the dishes I prepare are wild game because of my environment and interests. My favorites include Marinated Venison Tenderloin, grilled to perfection, RARE! I love crocking chili, stews and an occasional corned beef brisket. Almond planked white fish is delicious and I do a mean grilled Dolphin (Mahi-Mahi)
My favorite family cooking traditions
Mom's turkey of course! Call me weird but I really like the canned "cranberries" (more like Jello) The first time I had "real" cranberry sauce I thought it was the worse thing I ever put in my mouth. My most fond memories are helping Mom stuff the turkey. Aside from holiday cooking I learned to love canning everything from jellies and salsas to meats. My Mom is my hero! I love you Mom.
My cooking triumphs
For many years I was afraid to attempt Lasagna, It just looked too complicated. Well last year I threw caution to the wind and prepared my first Lasagna with whole wheat noodles and it was awesome!
My cooking tragedies
Pizza. I supposed if I worked better with the dough it would have went better however, it acted like a rubber band. Every time I tried to stretch it out, it would return to a ball like shape. I tried to use a rolling pin but the dough kept sticking to the pin. Needless to say it just never happened. From now on if I want pizza from my oven it will be a ready to bake one that I can doctor up some.

Pita Chips
Love it! I mixed olive oil, garlic powder, pepper and brushed them on both sides whole. I stacked them and then cut them into triangles. I put them on a cookie sheet and sprinkled them with grated parm and baked them for 5 minutes and then flipped them and baked for another 3 minutes.

No Bake Chocolate Oatmeal Cookies
This recipe was very simple and fast to prepare. The treats are delicious!

Sausage Gravy I
I loved the recipe however I used a blend of venison and ground pork and the fat content was minimal. I used an additional tablespoon of bacon fat and it turned out great. Thanks!
