Grandma's Slow Cooker Vegetarian Chili

I thought the recipe as-is is too sweet, probably from the baked beans. I made this again, but with canned black beans, instead of the soup, and omitted the baked beans altogether. I added some water to compensate for the bean soup substitution. Oh, I also sub a red, orange, or yellow bell pepper for the green. I seasoned with celery salt and pepper and increased the chili powder. This made the recipe into a hearty, savory dish. Yum!

Slow Cooker Chicken Dinner

I thought this was really bland. Definitely needs some doctoring before it would be a hit in our house. I didn't have the time to do that today - I put it in the crock and let it cook til we got home for dinner.

Italian Sausage Soup with Tortellini

This soup is a family favorite! Just a couple tweaks - I use sweet Italian turkey sausage, saute ½ pound of sliced mushrooms with the onion and garlic, double the noodles, and omit the zucchini. As my kids say, "Yum-tastic!"

Chicken Fajita Marinade

I used this to marinate chicken for quesadillas - it was SO delicious! I didn't have beer, so I just used chicken broth. Tasted great!

Sensational Sirloin Kabobs

This was the best kabob I have ever had! The marinade for the steak was perfect! I chopped up the mushroom stems and some onion and added it to the marinade to make a reduction to accompany the kabobs - YUM! (Make sure to boil the marinade for a few minutes so its safe to eat!)

Turkey Noodle Stew

I really like this recipe! I made it with chicken instead of turkey, added sliced fresh mushrooms, and then followed the recipe exactly. The only reason I gave it 4 stars is because it needs more liquid- its too dry for stew and too wet for a skillet meal. Next time I'll double the broth and soup, add some celery and possibly more frozen veggies. This is a great recipe that you can easily tweak to suit youur tastes!

Simple Chicken Parmesan

I made this recipe tonight. I had to doctor the sauce a bit - it was too tomato-y for me. I added onion powder (you could also saute onions with the garlic), more oregano, garlic powder (or just saute more garlic), more basil, more sugar, 6oz. tomato paste and 8 oz. tomato sauce. While I don't think this recipe was particularly difficult, its definitely not "simple". I was able to get dinner prepared in about 45 minutes and it did dirty a lot of dishes. It tasted great - I would definitely make us again!

Hasty Chocolate Pudding
