Classic Spanish Sangria

Venison and Wild Rice Stuffed Acorn Squash

Beautiful dish, and open for creativity! I used two squash, venison sausage, and dried cranberries. When browning the sausage I added some diced onion and celery. I too cut back on the brown sugar and butter. This was fabulous!

Tofu with Pork and Cashews

To make this go a little further, I used one pork tenderloin, cut into strips. The amount of sauce and seasoning is still plenty. Also, try serving this over some pan-fried noodles. It's excellent: Boil some Asian egg noodles to just tender. Then toss with oil, salt and black pepper and saute in a separate wok or skillet, adding a tiny bit of soy sauce if desired.

Wicked Garlic Tofu Saute

Brown the drained and pressed tofu alone in the oil a little first, to give more toasty flavor. And add more garlic for a truly "wicked" experience!

Tasty Lentil Tacos

I was skeptical because I'm not a big lentil fan, but this is a great recipe! My whole family loved it on blue corn taco shells. I will cut back on the salsa amount next time, to keep the texture a little thicker.

Blueberry Zucchini Bread

Delicious little loaves! I followed other reviews and replaced half the oil with applesauce, used 1 1/2 cups whole wheat flour and 1 cup all-purpose flour, and replaced half the sugar with brown sugar.

Artichoke Spinach Lasagna

This is wonderful! I took others' advice and used fresh baby spinach chopped in the food processor. I used very little of the vegetable broth and used a marinara sauce recipe from this site for the pasta sauce.
