Steamed Mussels with Fennel, Tomatoes, Ouzo, and Cream

At first I was skeptical about the mix of flavours in this recipe and couldn't imagine them marrying well with mussels, but it was amazing. (I followed the recipe exactly and used the fresh live mussels). Twelve out of the twelve I served it to loved it. It deserves five stars. Ingredients are easy to come by, it is quick to prepare, and is an easy one to impress with!

Teriyaki Pork Tenderloin

4.5 stars. I would replace some of the olive oil with sesame oil and use fresh ginger next time. I liked the slightly spicy peppery crust the marinade gave the pork.

Cocoa Cinnamon Spread

I appreciate this recipe as a home made alternative to the commercially prepared product as you cut out all the preservatives and such. In fact, I never buy it anymore, so am happy to be able to make it instead. This tastes just like the store bought cinnamon spread, only better! I was almost swayed off by the negative review that complained about it tasting like chocolate buttercream icing. Far from it, in my opinion. I piped it into a little dish with an icing tip and the presentation was so nice. Paired with lightly toasted Vanilla Spice Bread from this site, it was a real treat. Tip: I scaled the recipe for 8 servings and that yielded about a cup of spread. The only change I might make next time is using my homemade "better butter" spread (60/40 veg oil & butter whipped together) to make it easily spreadable once refrigerated. It's hard to spread straight from the refrigerator otherwise.

Chicken Meatball Soup

This recipe is all about those little meatballs, which were very flavorful and made this soup fun, delicious and different. I would say the prep time is a bit off. Forming the meatballs is quite time consuming, and I actually made mine bigger than I think the recipe intends just to make it go faster. It makes a LOT of them. I adjusted the vegetables to allow for what my family likes, and added in a cup of orzo to cook in the broth near the end, as I had no egg noodles. This recipe goes in our 'favorite soups' file. Thank you!

Red Cabbage and Apples

Very delicious. I followed the recipe just as written with no changes. Be sure to add the vinegar/sugar mixture and taste test as you go to get it just where you want it. Perfect balance of sweet to sour and a very lively dish!

Soft Sugar Cookies IV

I followed this recipe to the letter. They were indeed soft, delicious, and a very easy recipe from start to finish. I used them as the base for the 'melted snowman' cookies and they were perfect.

Sunshine Morning Muesli

Really good. I was expecting to have to add sweetener but none was needed. Very creamy and filling. I added in dried blueberries and apples rather than the raisins and apricots. The fruit really adds a lot of flavor and sweetness. I also used home made 2% yogurt and 1% milk but the preparation method makes this creamy enough that it had a whole milk quality to it. I will make this often, especially since it's so convenient and quick to make.

Pumpkin Pie French Toast

I have made other pumpkin french toast recipes, and none compare to this one. I think what sets this one apart must be the cream, the pumpkin pie spice and vanilla extract. I could taste the pumpkin in this recipe and the flavor overall was great. I used whole grain bread as I wanted to make this as a healthy breakfast for my family however, if I was making this simply to indulge tastebuds, I would go for slices of french bread and top it all off with generous dollops of spiced whipped cream, or a scoop of vanilla ice cream and a good drizzle of maple syrup, as suggested. The whole family loved this recipe.

Plum Blueberry Upside Down Cake

Amazing recipe. I followed this recipe as written, using the submitter's suggestion to sub peaches for the plums. I took one reviewer's advice to add cinnamon to the batter as I liked that idea, and I baked it in a 9" springform, which made it very easy to plate. I needed two medium size peaches and only a 1/2 cup of blueberries for this recipe. This was a snap to put together from start to finish and looks so pretty. I was proud to serve this (popular) cake.

Canada Day Nanaimo Bar Cheesecake

This is a brilliant take on the classic Nanaimo Bar recipe. This version isn't as rich as the original recipe, which is great for someone like me who isn't a total fan of the bars (it's still rich as far as cheesecakes go, though). I chose to make this in a 9" springform pan for the classic good looks of a cheesecake, thus I halved the filling, but kept to the orginal scale for the crust and topping. I may not have crushed my cookies as much as the recipe intended, as there was just enough to cover the bottom of the pan. There was just enough ganache to top the cheesecake as well. Turned out very impressive looking on the serving table and was definitely enjoyed by all.

Excellent recipe. Simple, quick and delicious. The sauce was so creamy and had just the most wonderful flavor. I only adjusted by using a garlic herb cream cheese rather than plain. Just delicious.

Grilled Garlic Parmesan Zucchini

This recipe is perfectly written in every way, from the top right down to the grilling instructions. And very delicious. To die for delicious. I will make this a lot this summer when grilling, especially when I want to impress tastebuds. Thanks for a great recipe.

Italian Style Brunch Cakes

I adusted this recipe a bit by leaving out the green pepper and using ham in place of sausage. These are savory pizza pancakes (not nearly as elegant sounding as their name) and pretty tasty. They received thumbs up from everyone. I scaled the recipe to half the original and made them bigger than suggested, yielding 14 small pancakes. Note that they take a long time to cook. It says 20 minutes under 'cook time' which was true of mine, but the directions just say to brown on both sides. I only read the directions and didn't pay attention to the stated cook time, so I was caught off guard thinking they would take about as long as typical pancakes. These were delicious and different and I'm happy to have a new alternative for breakfast, especially one that is popular with kids and adults alike. Definitely serve with pizza sauce for dipping.

Coconut Lime Rice

Five stars. I made this recipe exactly as directed and was very pleased with it. It's not sweet, but a bit tangy and very savory. I love the combination of lime and coconut - one of my favorite pairings. The basmati was a perfect choice for this recipe. I will say though, that when I scaled this recipe up to serve 4, it made way too much, even with a reasonable portion per person. I won't bother doing that next time.

Chocolate Chip Bran Muffins

Yummy. I have a new favorite muffin recipe. I followed this recipe save for using whole wheat flour for the white. I also did not use plain bran flakes, but All Bran Honey Nut (flakes with oat clusters). The peanut butter adds a delicious element to this recipe - you can JUST taste it and it's not overpowering. It's a brilliant addition to an already outstanding recipe. I think using half chocolate and half butterscotch chips would be really good in this recipe because of the peanut butter flavor. This makes a nice thick batter and because whole grain muffins won't rise much, I overfilled the cups to yield 24 nicely domed muffins. Tons of flavor and nutrition in every bite of this delicious recipe!

Banana Milk Drink

I was looking for a quick and nutritious after school snack for the kids and found this. I used an over ripe banana that was from the freezer so it was thick. I just added a bit more milk. Also added a generous sprinkle of nutmeg, much more than the cinnamon. I think the vanilla adds a special touch to this pretty simple drink recipe. We loved it! Will make this often.
