Chemistry of Cast Iron Seasoning: A Science-Based How-To

I followed this technique to the letter and so far so good for my pans. I ended up doing about 8 coats total. Takes a few days but isn't labor intensive and I didn't find it produces much smoke at all, and only for about the first 15 minutes. Turn your fan on and open a window if you can. A week later my pans, being used several times a day every day, are still sleek, smooth and non stick. I think it's important to note that the author of this how-to refinishes antique cast iron, not the modern pans. Mine are newer (inexpensive) Lodge pans and I first used some elbow grease to sand off the coating that new pans are pre-seasoned with. It was this coating starting to flake off which first prompted me to try this seasoning technique.

Cherry Almond Oatmeal

I loved this recipe. The cherry and almond combination really kicked the boring old oatmeal up several notches. I don't use soy milk though, so used 1% cow's milk with a few drops of almond extract and a few tsps of brown sugar (for 4 servings) to replace the sweetened vanilla almond soy milk. I topped it off with some toasted chopped almonds and coconut. Very, very good. Thanks for the recipe.

Split Pea Soup with Rosemary

Strawberry Vanilla Pancakes

Well, another pancake recipe my 'pancake averse' daughter just raved over! I made these as written, but used 1% buttermilk for the milk. The vanilla and strawberry combination was divine. The pancake batter was not thin for me as it was for some, probably due to the buttermilk. In fact, I had to add an extra 1/4 cup. They were fluffy and beautiful. Top with whip cream and a sprinkle of nutmeg. Thanks for giving us a wonderful new option for breakfast!

Hidden Treasures Ranch Pockets

I made these exactly as written, and they were worth the effort! So good! This is one of those recipes that has you saying "why didn't I think of that?" Very original and very, very tasty. The kids were all over these. We have some left over and I know they will be great for lunch. In fact, I will make these again soon, just to have something nutritious and tasty to put in the kid's lunch boxes. Thanks, larkspur!!

Fresas, Mango y Plátano Con Crema

I'll agree this is addicting. Thanks for sharing the recipe with me this morning, SB! I also happened to have a beautiful ripe mango as well as the strawberries and bananas to use for this. I used 6% Balkan style yogurt (no sour cream) and added the suggested amount of sugar. As sweet tooth's can vary widely, I would suggest adding a little less to start, then more as needed. Mine was actually much sweeter than I expected. It's much like yogurt, only ramped up by about a 1000 percent! Try it, you won't be disappointed.

Strawberry Coffee Cake

This crumb cake is absolutely amazing. It really is all about that out-of-this-world crumb topping. It almost doesn't matter what lies beneath as with every bite, all you taste is the buttery, crunchy deliciousness of the topping. This recipe would lend itself well to other fruit - blueberries, raspberries, peaches etc. and is so simple to put together that I think I will be referring back to it often. Be sure to make this just as written - it couldn't be made better.

Awesome Strawberry Mango Smoothie

Very good. We liked that it was creamy. Full of refreshing flavor. Now, I didn't have the nonfat milk powder, so simply used non fat milk instead of the water. Thanks for a great new recipe, larkspur!

Pumpkin Pancakes

Made as written. Flavorful. The pumpkin and spices are wonderful in these pancakes. My daughter is NOT a fan of pancakes, but will gamely eat what is put in front of her. Imagine my surprise when she started raving about these. Wow. You know they must be good.

Slow Cooker Lentil and Ham Soup

This is going in my favorite soups folder. Mmm mmm good! The smokiness of the ham married really well with the seasoning and lentils. I increased the thyme to 1/2 tsp. To reduce the sodium in this recipe, I only used 2 cups broth and the rest water. The salty ham added a lot to the flavor.

Cocoa Cinnamon Spread

I appreciate this recipe as a home made alternative to the commercially prepared product as you cut out all the preservatives and such. In fact, I never buy it anymore, so am happy to be able to make it instead. This tastes just like the store bought cinnamon spread, only better! I was almost swayed off by the negative review that complained about it tasting like chocolate buttercream icing. Far from it, in my opinion. I piped it into a little dish with an icing tip and the presentation was so nice. Paired with lightly toasted Vanilla Spice Bread from this site, it was a real treat. Tip: I scaled the recipe for 8 servings and that yielded about a cup of spread. The only change I might make next time is using my homemade "better butter" spread (60/40 veg oil & butter whipped together) to make it easily spreadable once refrigerated. It's hard to spread straight from the refrigerator otherwise.

Honey Lemon Cookies

I followed this recipe but for two slight adjustments, using sour cream for the yogurt and and an extra two teaspoons of lemon zest in the cookies as I had no extract. The cookies are wonderful on their own without the glaze, soft and buttery with a lovely lemon essence, so I only lightly drizzled the tart lemon glaze on top with just a bit of lemon zest for color. Next time I would leave off the glaze altogether. This is the perfect cookie to have with a hot cup of tea.

Delicious Ham and Potato Soup

Excellent! Classic good taste. Simple and uncomplicated, but so good. I left out the bouillon as I didn't have any, so added the full suggested amount of salt. The naturally occuring saltiness of the ham must have added a lot to the flavor as well, because it was just perfect. Hubs couldn't stop raving about this one. I am too!

Tangy Horseradish Tomato Sauce For Meatballs

Totally unique recipe. Really enjoyed this zesty sauce for a change of pace. I was expecting it to be fairly spicy hot but it was not. Loved the subtle flavor of the horseradish. I made as written, but as the submitter told me that the original recipe did not call for the water, I left it out. I am glad I did as it would have been far too thin had I added it. It makes a lot, yielding about 8 cups of sauce for me. I just put the extra in the freezer for another meal. Looking forward to it! Thanks, smitty.

Home-Style Scalloped Potatoes

I am giving this 5 stars because it was the best scalloped potatoes I have ever had. I did have to tweak as I went along though. I had a feeling the sauce would not thicken up as it cooked so I only added 4 cups of milk. I'm glad I did. I still ended up adding several more tbsp of flour to thicken it, even with the reduced milk. This turned out perfectly in the end. Would have taken a picture, but the frenzy around the dish prevented that. It wouldn't have been a pretty one :)

Pull-Apart Hot Cross Buns

Lovely texture and flavor. Very nice recipe. Made as written, however I had to add in quite a bit more flour at the kneading stage (I used my KA). I also cut down on the glaze. Some mentioned that it makes more than necessary. I halved it and still had lots left over. I could also see that I was going to get 12 monster rolls, so I formed 16 and baked the extra in an 8x8 pan. They were a perfect size. My add-ins were currants and dried cherries. Thank you for a wonderful recipe.

French Pastry Pie Crust

This is the perfect pie crust for any cream or fruit pie. Rich, but not overly, flaky, flavorful, lightly sweet and it browns up beautifully. It really has every quality needed to take any recipe one step beyond ordinary.

Mango-Peach Smoothie

Nice flavor, just the right amount of sweetness. I added 2 tbsp of ground flax for extra nutrition and a 1/4 cup of vanilla yogurt as I only had regular milk, no vanilla soy. Thank you for sharing your recipe!
