Chocolate-Covered Cherry Cookies

Just like a real chocolate covered cherry, it's hard to stop at just one of these little gems. I followed the recipe for the cookie exactly. It's a little vague on how many it makes, though I was guessing 15 servings meant 30 cookies. I ended up with 25 cookie balls measured out with my tbs size cookie scoop (each one right around 25 grams). It was a snap to wrap the dough around the cherries, then roll the balls smooth before placing on the cookie sheet. Once cooled, I departed from the recipe slghtly by simply drizzling on some melted chocolate, as I didn't care to be left with unused condensed milk. I then made a powdered sugar glaze colored with some of the cherry juice and flavored with almond extract, to drizzle over the chocolate (for color and flavor). The frosting as written wouldn't have more than a simple chocolate flavor, as there isn't enough flavor in the cherry syrup itself. These cookies are fun, pretty and very delicious. Great for a special treat.

Whole Grain Banana Muffins

These were flavorful, moist and substantial. I confess to making a few minor adjustments according to what I normally have in my fridge/pantry - all whole wheat flour, a whole egg, and all 1% sour cream. I also just incorporated the nuts into the batter rather than sprinkling on top. I really enjoyed these whole grain muffins. Thank you!

Sugar Cookie Icing

This turned out very well in the end for me, but it was a toss up in the beginning whether it actually would or not. I ended up needing generous amounts of additional liquid to get it even to mix together. As directed, I kept adding corn syrup rather than more milk. It did end up very glossy and dried nice and firm.

Sturdy Whipped Cream Frosting

Very delicious whipped cream frosting. The cream cheese taste is barely noticeable and it piped fairly well for me. Of course, it's not buttercream, so you won't get the same definition with this recipe, but it was very workable and held up perfectly. Made a pretty and delicious addition to my cheesecake and did not compete with or overpower it.

Caramel Popcorn

I have a TNT recipe for caramel corn, but needed a big batch so I chose this one instead, as sometimes doubling candy recipes can be disastrous. It's greasy when fresh, but after a few hours, is perfect! You need two VERY large bowls to mix this up, unless you have one gigantic heatproof container. Be sure to remove any unpopped kernels before mixing, and because you put two large baking sheets in the oven at the same time, rotate the pans as you bake, to prevent the bottoms from burning. Also be sure to line the pans with foil. A little more than 1/2 a cup of kernels yielded 5 quarts of popped corn for me.

White Chocolate Raspberry Cheesecake

I was hesitant as to whether to review this recipe or not. It hit me when it was cooling that I had forgotten to add the cream with the chocolate. However, it turned out so well despite that rather large omission that I had to at least say thank you for sharing the recipe. The texture was heavenly, the taste and presentation outstanding. The white chocolate flavor was very prominent and, paired with the raspberry, insanely delicious. I topped and decorated the cake with 'sturdy whipped cream frosting' from this site which was a perfect, subtle match that took the cake over the top. This is without a doubt one of the best desserts I have served, ever (I have to say, it even rivals my own cheesecake on that point!) Thanks, CindyAnn.

Chocolate Drop Cookies I

On their own, without any frosting, these cookies are not great. With very little flavor, they are simply a carrier for the frosting. I had some butterscotch frosting to use up, so topped them with that instead of the chocolate. They do have a nice soft texture and with frosting on top, were much improved.

This was reeeaaallly good. I followed the recipe but used low sodium beef broth instead of bouillon. I don't understand why so many reviewers want to tweak the meatballs. They are delicious as written. They read like they will be bland, but do not turn out that way at all. Cooking the meatballs in the broth adds so much to the flavor of this soup. Be sure to toss in mucho cilantro when you ladle this up. Wow. So simple and so good!!

Jay's Signature Pizza Crust

Ten stars. This is a fantastic recipe. Make just as written. It's perfect. Soft on the inside and crisp on the outside just as promised, it was also very easy to handle. I often have a problem with pizza crust sticking to the pan, but this one released no problem. The recipe made two 12" pies. My search for the perfect pizza crust is over. Thank you!!

Easy Pizza Sauce III

This recipe came in very handy when I needed pizza sauce and was out. I always have tomato sauce and paste on hand, but not always pizza sauce. I just found the garlic was too strong, and I think the addition of a bit of sugar to the recipe would improve it greatly. Otherwise, great recipe. I only needed a 1/4 cup, so portioned the rest to put in the freezer which will come in very handy next time. Thanks!

All-Bran Classic Carrot Muffins

These muffins were very moist and flavorful. Almost too flavorful. I felt the amount of cinnamon and orange zest together were overwhelming. I would reduce the zest to a teaspoon. I might even reduce the cinnamon to a teaspoon as well. Otherwise a really nice, lower sugar, whole grain healthy muffin recipe.

Low-Fat All-Bran Banana-Cocoa Muffins

These have a very intense chocolate flavor with a hint of banana. I just found them a touch on the dry side for my liking. But for a low fat muffin, overall they were very good. I would not recommend baking at 400. 350 for 20 minutes was perfect. They would have been even more dry and overdone at 400.

Chili Rick's

I made this chili for Superbowl last year and it was popular enough to make a repeat appearance this year. BUT, I needed to make one important tweak (hence the 4 stars). I now use only one cup of the bbq sauce so it adds a SUBTLE element to this chili rather than an overwhelming one. I also recommend adding half the chili powder if you like a subtle spiciness. Half the amount of chili powder along with the spicy sausage makes for a subtle spiciness. But if you like it hot, by all means add the full amount. This recipe makes a TON of chili, so it's perfect for a large crowd. Tip: your cooking pot needs to be bigger than 8 quarts if you are going to simmer the chili in the pot. I mix the whole thing up in my 8 quart stock pot but it's too full to actually let it simmer in, so I then split it between two slow cookers and cook on low heat for the entire day. Makes the house smell delicious. Popular with everyone, kids and adults alike, this is definitely meat lovers chili - my daughter dubbed it 'Man Chow'. Thanks for sharing the recipe.

Slow Cooker Northern White Bean Bacon Chowder

I followed this recipe to the letter but left out the milk in the final step. After pureeing the whole batch, it was not nearly as thick as I would have liked and I did not want to water it down more by adding milk. To me, a bean chowder should be very thick and this was not. I would make this again but reduce the amount of broth called for.

Fluffy Peanut Butter Frosting

Perfect topping for chocolate anything! I made half the recipe to top an 8x8 inch pan of brownies. Very simple recipe which produces a velvety smooth, creamy frosting. Delicious.

Chicken Meatball Soup

This recipe is all about those little meatballs, which were very flavorful and made this soup fun, delicious and different. I would say the prep time is a bit off. Forming the meatballs is quite time consuming, and I actually made mine bigger than I think the recipe intends just to make it go faster. It makes a LOT of them. I adjusted the vegetables to allow for what my family likes, and added in a cup of orzo to cook in the broth near the end, as I had no egg noodles. This recipe goes in our 'favorite soups' file. Thank you!

Very delicious. I followed the recipe just as written with no changes. Be sure to add the vinegar/sugar mixture and taste test as you go to get it just where you want it. Perfect balance of sweet to sour and a very lively dish!

Soft Peanut Butter Cookies

Nice and soft as promised. Not a tremendous amount of peanut butter flavor though. I added some chocolate chips for fun. I would make these again and add more peanut butter. Loved the texture of these. Buttery soft inside and only slightly crisp outside. Very decadent.

Italian Wheat Rolls

Loved the flavor of these. The olive oil really stands out. I followed the recipe closely, only using all purpose for the bread flour. Nice texture and hearty. Perfect as soup/sandwich rolls. I made some as bread sticks as well, brushed with an egg wash and sprinkled with garlic salt and cornmeal. Those were the best. Thank you!
