Simple Sweet and Spicy Chicken Wraps

Reviewed: Apr. 8, 2011
I give this 4 stars as, minus the mayo/cucumber sauce, it's rather ordinary and the recipe, in my opinion, is way too light on the delicious sauce. I would definitely make them again but increase the mayonnaise mixture by double and really slather it on. I made another wrap for lunch the next day with the bit of leftover chicken there was, added more of the sauce, and that one was knockout delicious. Thanks for the recipe, it's a keeper.

Cream Cheese Blueberry Pie

Reviewed: Apr. 5, 2011
I take issue with this recipe calling for fresh OR frozen blueberries without specifying the need to increase the cornstarch accordingly if using frozen. An inexperienced cook would have a bit of a flop with this recipe as such. Otherwise, this is a simple and refreshing dessert. Perfect for a light, informal end to any meal. I chose to make a graham cracker crust over a pastry one to keep this a no bake dessert and for the sake of simplicity. Very nice!

Orange Banana Nut Bread

Reviewed: Apr. 5, 2011
This would be a 5 star recipe but for the fact that the orange flavor is almost nonexistent. I made it a second time and added a pureed whole large orange, which added zest and also the juice the recipe calls for. It gave fantastic orange flavor to this otherwise lovely banana bread recipe.

Baked Garlic Parmesan Chicken

Reviewed: Apr. 5, 2011
Very good. It's amazing how delicious the most basic of recipes can be. This one yielded flavorful, very moist chicken breasts. I wasn't sure about the basil at first but it was really what made this recipe. There was only one small hiccup ~ the olive oil and garlic mixture was not even sufficient to coat the 4 chicken breasts I was using. Otherwise, follow this recipe to the letter and you can't go wrong.

Pumpkin Wheat Honey Muffins

Reviewed: Mar. 31, 2011
I love a tender, moist and substantial whole grain muffin recipe and this one fits that description. Very flavorful as well. I added a 1/2 tsp ginger for a pumpkin ginger flavor, as well as chopped candied ginger in place of the raisins. Took them over the top, for me. Everyone at my house loved these muffins, and I'm happy to have another to add to our favorites file. Thank you!

Satiny Chocolate Glaze

Reviewed: Mar. 29, 2011
Outstanding glaze. Perfect as is, it dries firm but stays just a bit soft, is absolutely glossy and oh so rich. Can't wait to use this recipe again.

Don't Want to Cook Monday Chicken

Reviewed: Mar. 29, 2011
This does live up to it's promise of being a nice break from spicy. However, lack of spicy doesn't have to equal boring, which I found this suffered from a bit. I would really recommend increasing the sauce and sprinkling some sharp cheese on top before baking.

Herbed Salt

Reviewed: Mar. 29, 2011
What a great idea! I never would have thought of this myself. I had some excess lime zest to use up so I tried that. It's delicious. Can't wait to get creative with it. Thanks for the idea, ibbz.

Tasty Salad Seasoning

Reviewed: Mar. 23, 2011
Very tasty and very versatile. I've sprinkled it in salad with a simple oil and vinegar dressing, on top of sliced tomatoes and cucumbers as well as steamed fresh veggies. The possibilities are endless with this seasoning blend. Thank you for the recipe!

Seasoning Blend

Reviewed: Mar. 23, 2011
This blend reminds me very much of Lawry's seasoning salt without the salt. So far, I've used it to spice up home baked french fries which were really good with it. Thanks for the recipe.

Strawberry-Rhubarb Cup Dessert

Reviewed: Mar. 22, 2011
I found this recipe when doing an ingredient search to find a way to use up some of the frozen rhubarb taking up space in my freezer. It was perfect ~ a quick, simple and light dessert. It did not make 7 servings for me ~ I'm not sure if the frozen fruit made a difference or not, but it yielded only 4 (6 oz) servings. Very refreshing, with a nice sweet/tart contrast.

Mother's Ham Casserole

Reviewed: Mar. 21, 2011
Good, homey comfort food. A great use for leftover ham. Everyone loved this casserole. Beware that it makes considerably more than 4 servings, unless you are feeding teenage boys and Dads. I'd say more like 8 servings.

'Out of Salad Dressing' Salad Dressing

Reviewed: Mar. 21, 2011
This was fairly tart made as written. I would recommend juicing half the amount of lemon and adding it to taste. As the size of a lemon can vary widely, the recipe might have been better served written with a volume amount rather than the vague "1.5 lemons". I also did not need to add any milk as it was quite runny to begin with. I suspected it would be quite salty with the garlic salt called for, so I went with a sodium free garlic herb seasoning blend instead which turned out to be a good call.

Slow Cooker BBQ Chicken

Reviewed: Mar. 18, 2011
Fantastic! I love the sauce for this recipe and would even use it any time I need a quick bbq sauce. It's tangy and just a bit sweet and very zesty. I added a bit of cornstarch to the sauce just before serving in order to thicken it up a bit more, but otherwise changed nothing. We had it over brown rice, but it would be good topping for a baked potato as well. This is a versatile recipe that I know I'll be making again some time. Thank you.

Strawberry Shake

Reviewed: Mar. 18, 2011
Normally, I would not pick a recipe that uses jam over fresh berries, but it just so happened that I had some less than stellar tasting strawberries to use up, so this recipe was perfect. I just used less jam than called for and tossed in the berries. I also used a frozen banana instead of ice cubes as ice waters a smoothie down. The only thing this needs is vanilla yogurt instead of plain, for best flavor.

No-Guilt Zesty Ranch Dip

Reviewed: Mar. 18, 2011
As is often the case with giving a review, the opinion given usually boils down to a matter of taste. I found this only slightly resembled a ranch dressing in flavor and there was something about the combination of spices that didn't add up for my tastebuds. I'm not sure, but I think it was the thyme and basil. I always appreciate a recipe for a home made version of something usually storebought, so I will play around with the seasonings a bit, maybe try it without the horseradish. I have to say though, Hubby LOVED it, so hopefully he'll be happy with a slightly revised version! Thanks, Sarah Jo.

Gloomy Day Smoothie

Reviewed: Mar. 18, 2011
Very nice smoothie. To make it more refreshing though, I used a frozen banana (or you could use frozen mango cubes). I always toss my over ripe bananas in the freezer to have on hand for smoothies as a frosty quality always makes one so much more refreshing. I cut the recipe in half and it yielded two 8 oz smoothies.

Deluxe Almond Butter Sandwiches

Reviewed: Mar. 16, 2011
I found this little recipe when I was doing an ingredient search for ways to use my almond butter. For so few and simple ingredients it was really delicious. Also not a combination I would have thought to put together. My kids enjoyed this one as well.

Teriyaki Pork Tenderloin

Reviewed: Mar. 16, 2011
4.5 stars. I would replace some of the olive oil with sesame oil and use fresh ginger next time. I liked the slightly spicy peppery crust the marinade gave the pork.
