Best Toffee Ever - Super Easy

Woo Hoo! This was easy and turned out really well. I have never made candy before...afraid of cooking to a perfect temp by thermometer! Heated slowly bringing up to 140C, stirred intermittently then poured over buttered parchment paper sprinkled with almonds, added chocolate and more slivered almonds...worked a treat!!

Chicken Paprikash

A guilty pleasure made healthy. I, too, used chicken stock instead of water. For years I have substituted low fat natural yogurt for sour cream and this was no exception. The sauce was so creamy it felt like a real luxury. I used one tablespoon smoked paprika, one of sweet paprika and 1/8 teaspoon of cayenne. Will up that to 1/4 tsp next time. I made the spaetzel (sp) from Nikki's review on Aug 18th and it was nice and light but hubby still asked for some potatoes. This is a keeper for sure and we look forward to having this again.

Penne with Spicy Vodka Tomato Cream Sauce

We love this! We had a dish in Sicily in a very similar sauce but with a seafood mix (prawns, mussels, squid rings and fish) instead of sausage. I do it with seafood and add oregano and basil to it as well as a couple sliced onions for hubby's taste. Try it...you will be glad you did.

Greek Style Potatoes

Fabulous! For speed I quartered the potatos and microwaved til 3/4 done. Put in pan, I had sprayed, skin side down and poured sauce over the top. Baked at 400 for 15 min then turned to flesh side down and baked 15 more minutes. Crispy outside...fluffy inside. Excellent with the Souvlaki by Abby Benner also from this site. Hubby said the two together was one of his favorite meals ever.

Moroccan Chicken and Whole Grain Couscous

Yummilicious! I simply sauteed the onions, added all the spices (adding more of all the spices) then four cups of chicken stock. Put a whole chicken in and let it cook. Took the chicken out and put in the the fresh chopped tomatoes, some sultanas and zucchini in to simmer gently til done. Boned the chicken and put in a bit soda to counteract the acid of tomatoes, thickened with cornstarch and added back chicken meat. Gorgeous and so easy.

Indian Chicken Curry (Murgh Kari)

Love this! I put all the spices in at the same time after the onion/garlic/ginger has cooked for while. I think cooking the spices this way really brings out the flavor. I just put the chicken in towards the end and let it poach in the sauce then add the yogurt at the very end to warm through. Sometimes it needs some thickening with a cornstarch/water paste. YUMMY!

Chicken Jalfrezi

First time making this last night and will not be the last!! This was fabulous and so easy to make. Just need to take a minute to measure all the spices and herbs into a bowl. I sauteed the onions and garlic together in butter then added all the herbs and spices to the pan and gently fried them with the onion/garlic. Added 1/2 tsp of dried chili flakes for a bit of heat. Added the tin of tomatoes then added the remaining garlic, ginger and cilantro. Let that simmer for a good while...adding a bit of tomato puree and water to keep it from drying out. Added cubed chicken breast to the sauce and let it gently simmer in the sauce to cook. The chicken was tender and moist and the sauce divine! As good or better then any jalfrezi I have had in a restaurant...we were delighted and can't wait to have it again. ENJOY!

Made this with pollack tonight and it was very nice. We liked the bit of heat and flavor the cajun seasoning offered as pollack is a bit bland on taste. Will definitely make this again.

Cabbage Roll Casserole

So easy and yummy too. From a previous reviewer "I added a little sugar to break up the acid in the tomatoes". Another good tip when cooking with tomatoes...add 1/2 tsp (more if big batch) of baking soda and stir. It will bubble up and negate the acid. Works great in chili and spaghetti sauces.

Easy Cajun Jambalaya

Really enjoyed this. Added a pinch more cayenne, one can of chopped tomatoes, pre-cooked the rice,added about four cups of broth then the rice. Let it simmer for five eminutes to reheat the rice, Used asian chili sauce instead of tabasco...but, it was all still good. YUM.

Old Fashioned Onion Rings

Panko is the way to go on these. Out of this world. After I fried them I kept them warm in the oven on a rack and they were perfect when served. Love these and worth the work.

Delicious Raspberry Oatmeal Cookie Bars

I cannot stop making these! LOVE, LOVE, LOVE them! The favorites so far is raspberry and black currant. Strawberry was to sweet but it may have been the jam. Cherry with lightly toasted sliced almonds was good too. Hubby is not a fan of sweet things so I cut the brown sugar in half as well as the butter. I add one lightly whisked egg with some vanilla to the dry ingredients. It takes a bit of working with my fingers to blend it together but it's worth the effort. This way isn't as crumbly as all butter I also use half white, half whole wheat flour plus 2T of wheat germ. I feel like it's a bit healthier but just as tasty. Did I say we LOVE, LOVE, LOVE them? Mmmmm.

Souvlaki

EXCELLENT!! I made ours with chicken. I marinaded the chicken and onions together then, as others, put mine in roasting pan and baked for 10 min at 400. Added in the peppers and zucchini (subbed for green pepper) and mixed together...five more minutes in oven then under the grill for 10 to give it a char. Chicken moist and veggies were al dente. DIVINE! Served with Greek style potatoes by Cathie from this site...also excellent.
