Cranberry Chipotle Meatballs

I made it for a party and everyone loves it. I got meatballs from Sam's. If you are doing it for a potluck party, you are likely going to double the recipe. I pretty much followed the recipe. I did not drain the juice from the pineapple can. There are 2 types of pineapple chunks...one in heavy syrup and the other one in 100% juice (I used the latter). I doubled the recipe and only used 3 chilies and some of its sauce. It gave a hint of heat but not too overpowering. Will do it again for sure. Thank you for such a great recipe.

Pumpkin Ginger Cupcakes

Chicken Tortilla Soup V

Definitely a keeper for two reasons - easy to make and it's darn tasty. I added chopped green pepper (one green pepper), added half a can of black beans, used black bean salsa, added a bit more cumin and chili powder, and added a can of rotel. It's delicious.

Colleen's Slow Cooker Jambalaya

I made it yesterday for a potluck party. Here is the key to success. 1. Use hot andouille sausage 2. It's soup like. But no problem, you take the broth from the slow cooker (before you put the shrimps). Use that broth to cook rice in a rice cooker for a separate pot. 3. Add shrimps to the slow cooker for 30 minutes. 4. Assemble cooked rice and ingredient in slow cooker. Here, you want to take the majority of liquid out from the slow cooker...stir rice in the slow cooker...add liquid back to the consistency you like. I end up throw away some of the liquid...but nonetheless, it's fantastic.

Carrot Pineapple Cake I

I added nutmeg and 1 cup of raisins; increased carrot to 3 cups; used 4 oz apple sauce and 1/2 cup veg oil; didn't drain the pineapple. This cake was wonderful; can't go wrong.

Blueberry Zucchini Bread

We made 2 big loaf pans (350 F for 1 hour 5 min); used frozen blueberries; reduced sugar to 2 cups; used 4 oz apple sauce and 1/4 cup veg oil; used 2T white sugar 2T brown sugar and cinnamon as topping. And these were wonderful.

Jamie's Cranberry Spinach Salad

WOW WOW WOW. I made it for a potluck and it was a big hit. Since then, we have made it pretty much every week. I use mixed green instead (coz we don't like spinach). I cut the sugar down by half. I added blue cheese, mandarin oranges OR strawberries and grilled chicken to it. Once you add chicken, it becomes a meal. Thanks Jamie!

Chicken Noodle Casserole I

So good. I make sure I season the chicken so that it's not too bland. I also add frozen veg but I cooked it first (sauteed it with chicken).

Bow Ties with Sausage, Tomatoes and Cream

So good. I pretty much follow the original recipe and it was soooo good. I will definitely make it again. Oh...like other comments, you need to drain the grease before putting in tomatoes and cream.

Ooey-Gooey Cinnamon Buns

This is the best ever cinnamon bun I have ever tasted. This is the first time I made it too and it's so easy to do. My husband and I are loving it. It is so buttery and it melts in my mouth....ohhhhhhhhh soooooooooo gooooooood. Okay. I took others' advice. First, I didn't melt the butter for the cinnamon spread. Second, I only baked it for 18 minutes. Third, I used 2 cake pans (round pans), instead of 13X9 pans. They are so good.

Best Ever Banana Bread

This recipe is very easy to follow. More importantly, it tastes great. It's very moist. Since I don't have buttermilk, I used 1 teaspoonful lemon juice in a 1/3 cup of milk and let it stands for 5 minutes. Like others, I also added a splash of vanilla. BTW, I used 4 very ripe bananas. I have no idea how many cups that was. But, it came out great. It was so yummy. Try it. You won't be disappointed.
