Spiced Eggplant Indian Style

Next time will not bake eggplant but blanch and saute with onions and 1 clove minced garlic. Also added some salt and had to use ground coriander (1/2 tsp) and will add more next time too. Thought I had seeds but... Used canned tomatoes which was fine. Not impressive looks but really tasted pretty good.

Sweet Potato Pancakes

I thought I would really love this recipe and found it to be only OK. There was nothing to drain from the potatoes after 10 min per directions. I added a little cinnamon and that worked just fine. I might try them again and serve topped with applesauce. I served with a dollop of FF sour cream and it also made them tastier.

Irish Soda Farls

Just wonderful. I used skimmed milk with vinegar instead of buttermilk, 1 tsp salt & 1 1/2 tsp sugar. They came out perfectly. I make scones at the drop of a hat and these were darned near as good and so much faster. Thanks for the great recipe.

Sugar Cookie Drops

I have never made a good sugar type cookie and am so glad I tried this recipe. So easy and so good. I added some salt as suggested. Next time I will add zest or try other extracts than vanilla. Just perfect as written with added salt of course. Definitely makes a LOT of cookies. Thanks for submitting it.

Mediterranean Potato Salad

Really good. Was out of white balsamic vinegar so used rice vinegar instead. Next time will have the correct vinegar as mine was a little too bland. Added a little green pepper and a pinch of sugar. A keeper for sure. Thanks Jean.

Mom's Zucchini Bread

Very very good. Just a few minor changes. Used 1 cup wheat flour & 2 white, 1/2 cup oil & 2/3 cup applesauce, 1/2 cup brown & 1 1/2 white sugars, 2 1/4 cups Mexican Grey squash quite like zucchini but less "wet" and raisins instead of nuts. Nice and moist. Thanks for the great recipe.

Honey Wheat Sandwich Rolls

So easy and soooooo good. Minor change was a little less white and a little more wheat flours. No butter on top either. Let rise in oven that I thought was barely warm but actually a little more than that. They rose very quickly at first but baked up perfectly light and fluffy. I cut into squares and hot dog sizes with a knife. Ate as dinner rolls and sandwiches. thanks SEEFREE.

Grandma Emma's Spice Loaf

Made this today and did a few changes as others did. Used 1/4 cup each butter and shortening, 1/2 cup each white and brown sugar, 1 cup each white and wheat flour, added about 1/2 to 3/4 cups oats. it would have been just great exactly as per recipe too. Only suggestion would be to add a little more raisins. Definitely a keeper. Thanks Marsha

Grilled Chicken Thighs Tandoori

Good! I added a little cayenne and baked it in the marinade. served it with rice of course. Next time will bake on a rack as others suggested and add a little lemon juice. Easy, fast recipe other than the marinating time.

Curried Pumpkin Soup

Really good. I grated the apples, cut curry down to 2 tsp, and added 1/2 tsp cinnamon at the end of the cooking. I only put a little of it in the blender and mixed it back in with the rest of the pot. Thanks Debbie

Honey Mustard Grilled Chicken

Fantastic! Used Fat Free Mayo and Worcestershire and may have used a little more honey as I was squeezing it out of packets. Used Foreman grill but will try baking next time as the grill was so hard to clean. Doubled sauce and so glad I did. YUM! Thanks Tahoegirl.

Brazilian Chicken with Coconut Milk

YUM!! A real keeper! Tried VERY hard to follow recipe exactly but did a few substitutions. Used 2 breasts in chunks, no turmeric so 1/2 tsp curry instead, 1 jalapeno, diced canned tomato instead of fresh(no juice), canola instead of olive oil, found I had coconut cream instead of milk so diluted 4 TBSP with 1 2/3 cups water and skimmed milk. Added chicken back to veggies for about 10 min. and mixed all with coconut milk to simmer a while. Used the full amount of spices and shook the chicken chunks in a bag to coat leaving them sit for about 20 min. Garnished with cilantro instead of parsley. Spicy but with rice PERFECT!

Cardamom Chicken with Salt and Pepper Crust

Really quite tasty. So simple too. Only let it marinate about 3 1/2 hours as I ran out of time. Next time will do it for the full time though. I used a little more cardamom than called for and next time will go even a little heavier with it. Also did just a tad less soy sauce but that was my preference. This is a keeper. Thanks Darla.

Coriander and Cumin Rubbed Pork Chops

Gingery Carrot Salad

Really glad I made this for a pot luck. Just a few changes to suit my taste. Used canola oil, honey, dried cranberries and just a little more salt. Added cilantro which was suggested. I made it the night before and added the cilantro in the morning. Wonderful!

So easy and so good. Next time I will try a little less sugar but great as written. Had to use milk soured with vinegar and it worked just fine. Be sure the soda is all dissolved.
