Spanish Flan

I don't usually change a recipe the first time but from reading reviews I decided I would. I used the microwave to melt the sugar and added a half a cup of water. I let it go around 6 minutes, going 2 minutes the first 4 minutes and 1 minute at a time after that. I believe it was 6 minutes. I let it get a bit darker then golden and it was perfect. I put all the other ingredients in the blender (using 4 jumbo eggs) then put the pan in another pan of water in the oven. This turned out better then I had hoped. My husband said it was better then any restaurant Flan he has had and bragged about it for a couple days. I think this is my new favorite dessert recipe! So simple!

Cream Corn Like No Other

Good and easy recipe. I've never made cream corn so I have nothing to compare it to other then canned cream corn. However, everyone liked it. Not a lot of comments but noticed the kids taking 2nds. Taking 2nds means a lot at our house!

Sweet Potato Bake

I loved this recipe. I don't like yams but I could eat them in this recipe. Recipe was easy and a big hit at our Thanksgiving dinner. Since my bunch is all use to the marshmallows on top of the yams they were really disapointed when I said I wasn't making them that way. I ended up throwing marshmallows on top the last couple minutes of cooking and they were all happy.

Slow Cooker Italian Beef for Sandwiches

I followed the suggestion of others and used beef broth (2 cans) plus water to equal recipes liquid requirement. I also used 2 pkg's of Italian Salad Dressing. My husband wasn't thrilled by the recipe but my son raved about it. We ate about 1/2 at dinner and the next day my son ate the entire 1/2 roast by himself. He then asked me if I could make the recipe again later in the week. I thought the recipe was good. I would probably rate it 4 star except that my son absolutely went crazy over it and I didn't follow the original recipe to a tee.

Curried Coconut Chicken

My adult sons loved this and gave it a 5 star. I give it a 4 star. I thought it was a tad bit to sweet. Next time I'll only use 1.5 T of sugar. Other then that it was great.

Aaahh! Potato Soup

Great EASY recipe! I used fat free 1/2 and 1/2 and added about 1/3 cup real "fat free" bacon bits. Next time I will add carrots and celery for more texture. Great Recipe for a cold lazy day

Slow Cooker Chicken Taco Soup

This was a 5 star on the ease of the recipe. I also used Bill's taco seasoning mix. My boyfriend loved this recipe. My sons and I thought it was "good". I'm making it again today with a regular envelope of taco seasoning to see if there is any difference.

Sausage con Queso Dip

This was a big hit. I used a can of "hot" Rotel tomatoes. At first it did seem like there was to much liquid but I kept it in a small crock pot and as the night went on it thickened up. This was a breeze to make and yummy!

Never Enough Green Bean Casserole

Unstuffing Side Dish

This was a huge hit. I made it in a large crock pot and doubled the recipe. I also added one granny smith apple. My son who doesn't like stuffing, loved this. I'll be making this next year for sure!

Chewy Coconut Cookies

I've made several coconut cookie recipes in the past. This was the best! Will definitely be making again. Note: a week after making these cookies my 19 yr old son asked me if I would make another batch. He said they were the best cookies he'd ever had! Just made these for the 100th time and decided to add Heath Bar chips for the heck of it. I added about 75% of the bag (I ate the other 25% LOL). I had a friend over and he could not stop eating them. He commented several times this week about the cookies and asked me to please make them again.
