Smothered Chicken Breasts

Excellent dish! My prep time was a bit longer, as I had thicker breasts that I pounded thin and halved, but everything else was quick and easy. I reserved a bit more bacon grease, and cut the brown sugar down a little, but I don't think it amounts to much difference. The flavor was wonderful! Thanks for sharing!

Low Carb Jambalaya

I was looking for a low carb main dish to make and ran across this recipe. Being a fan of Cajun cuisine, I decided to give it a try. The only straying from the recipe that I did was adding more hot sauce. Obviously heat is a personal preference, so I spiced it up to my liking. Other than that minor change, I did exactly what was directed. My opinion? Phenomenal! The flavors are amazing and the textures are distictly jambalaya. You will not miss the rice! My only suggestion is to double up on the recipe. It makes a lot as it is, but you'll be wanting more!

Mushroom Saute

I made this as a side dish for the Lobster Colorado (found on this site) and squeezed one lemon in while cooking. I let it cook a little longer to remove some of the moisture added from the lemon. It tasted amazing and went well with the steak/lobster. Amazing!

Southwestern Egg Rolls

A huge hit at the office! Except for doubling up on the ingredients to make more, I went by the "book". Tasty! One thing to note (if not already noted) is that you should leave the toothpicks in until done frying. That may be common knowledge for most, but being a novice in the kitchen, I had to pull my first one out of the oil after it started unraveling. Lesson learned.

Cranberry-Jalapeno Relish

I'm not a fan of cranberries. I only made this because no one would volunteer to bring a cranberry dish to my son's school's Thanksgiving lunch, so I put my name down. Boy am I glad I did! This is a delicious dish! All the attention from the women wanting the recipe was a nice little perk as well... ;-)
