Roasted Duck

Very simple to make and delicious. The whole family loved it! One tip, get a food thermometer that you can keep in the meat while it's cooking. The probe runs a wire to the outside of the oven attached to the display. You can see the internal temp w/out opening the oven. The full 2 hours would have been a little too long for my bird.

Sausage Potato Casserole

This was Great!! I was a little skeptical about the kids liking it, because you never know from one night to the next what they're going to like, but they LOVED it!! I took a can of mushrooms and FINELY chopped them up, and I threw them into the sausage meat when browning it, along w/the onions. They never knew they were in there! My youngest asked if I could make it tomorrow and the next day and the next day...

Diego's Special Beef Stew

This was very good. Easy to prepare and tasty. I left out the Wocestershire (only because I didn't have any) and it was still god. Next time I might add some mushrooms.

Fennel Pork Chops

Yumm!! I did what a previous poster did and added cream of mushroom soup to thicken the sauce and add to it. I also used fresh fennel because I don't keep fennel seeds in the house, but I usually keep fresh fennel. I also didn't have garlic salt, so I used Kosher salt and garlic powder. It was great. The sauce was delicious served over rice. Will definitely make again.

Stuffed Breast of Veal

My mom always made this when we were growing up, but took the easy way out. She would use Pepperidge Farms Stuffing mix and make that. Also, she would layer the top of the meat with bacon. For those who are not Jewish, give it a try, it's great!

Almond Cranberry Squash Bake

Made this as a Christmas Dinner side...it was so good! The squash and the cranberries are an interesting combination, but they compliment each other so well! I personally am not a fan of almonds, so I used Pecans instead...delicious! I didn't think I was going to have time to make it using a fresh squash, so I used frozen, it still came out great! Good to know if you're in a time crunch.

Waffles II

I'm giving this only 3 stars because if you don't add anything to the batter to sweeten it up, or give it flavor, they are very bland. I made them w/choc chips for the kids, but ran out, so I had the plain one that was left. That being said, I think these have to be the lightest and fluffiest waffles I've ever had!! Adding the beaten egg whites really makes a big difference than ordinary waffles. Worth the extra effort. Take the advice of others and add either some sugar, frozen fruit, choc chips, or just some vanilla extract to add to the flavor.

Cherry Fluff

So simple and delicious! I made it for a co-worker's birthday. I put it in a Graham Cracker pie crust, and let it sit overnight. It's a hit! I used Lite Cool Whip instead of the real deal, but it was still delicious! I'll be making this for Christmas. I see it more as a dessert than a side dish.

Ginger Scallops

Wow! This was great. I made a few alterations...substituted mushrooms for the carrots, and added coconut milk and some cilantro. Cooked it all up and served over Spaghetti. The whole family loved it, and it was easy!! Will definitely be making this one again!

Pesto Chicken

My husband decided that he was going to make this the first meal he EVER cooked. Well, it was great! Simple enough for someone with NO cooking skills to do, and do it well. It was just great. So tasty, too. I think it all depends on the pesto you use. That will make or break it, so be sure to either make your own, or get a good quality one.

Cinnamon Rolls I

These tasted good, but something went wrong and it's got to be my fault. I'm not much of a baker so I'm hoping someone can reply and help me out. First off, when I let the dough sit for the 10 minutes under a damp cloth, it didn't rise...was it supposed to? Also, I didn't want to wait overnight, so I let it sit covered for 45 minutes...again, it didn't rise. Not sure why. I think this is the root of my problem. When they were cooked, the dough was dense, not light and airy like you imagine a cinnamon roll to be. I wouldn't necessarily call them heavy, but dense. Any ideas why my dough didn't rise up? I would love to make them again. I followed the recipe to a tee.

Pork Chops in Beer

While the meat was tender and juicy, it was bland and boring. The "sauce" didn't stick to the meat at all, so when you took a piece, it was just a bland piece of pork. Not worth the time or ingredients put into it.

Best Chocolate Chip Cookies

WOW, that's all, just WOW. The ingredients are the same as your basic Toll House type recipe, but the measurements are increased a bit. What a difference that makes!! THE BEST cookie I have ever made. Followed it just like it was written.

Pizza Dough I

This was my first attempt at making pizza dough and it was fine. I wouldn't say it was great, but for the ease of the recipe I'm giving it 4 stars. I happened to have some basil infused olive oil, so I used that instead of Veg oil. Other than that I stuck w/the recipe as is. My son liked it, hubby not so much. It's more of a bready consistency, which isn't bad but it isn't like pizzeria dough. Anyway, would I make it again? Not too sure. Might try a more timely dough next time, or just go to the local pizzeria and buy the dough like I usually do. It was nice to make my own, just to try it. Thanks for sharing.

Chicken Tetrazzini IV

Made this for tomorrow night. I have a really busy day tomorrow and wanted something that seems like I can make ahead of time, so I took some of Sarah B's pointers and made it up until the last step which is the baking. I'll do that tomorrow night. Anyway, I tasted it when I poured it into the casserole dish and it was great!! Like Sarah, I cooked the chicken in oil and crushed garlic. Took the chicken out of the pan and made the roux with the chicken bits. I also added the nonfat evaporated milk (trying to save on the fat, since I used the real butter), and since I didn't have Sherry, I used my hubby's homemade red wine...what the heck, right? Also used Chicken Stock in stead of Broth only because it was in the house. Simple enough recipe and so far, it's good. Hopefully it will refrigerate and heat well tomorrow.

Pot Roast in Beer

This was really easy and delicious. I didn't have any celery, but I did have a fennel bulb. Figured they're both in the same family, I think, so I cut it up and used it instead. It was really good. The gravy was delicious. Everyone loved it. Will definitely make again. Thanks for sharing!

OH MY!! This was sooo good! I'm not a fish eater, but am trying to eat more. I made this and I honestly think this will be a regular recipe for me. Use Lite Mayo for less calories/fat, etc.
