Aussie Chicken

I'm unsure why it's called Aussie Chicken, but that is really of no regard. The sauce is delicious. The only thing I did different was rather than cooking the bacon prior to baking the chicken, I did that all in one final step. The bacon got nice and crispy in the 25 minutes I let the chicken go in the oven (yeah, I left it in 10 minutes longer.) The sauce is perfect and the combination of the savory bacon and chicken with the sweet sauce was perfect.

Bacon-y Bok Choy

This was absolutely delicious. I served it over a bed of rice with some soy sauce. The salt of the bacon and the heat of the red pepper flakes tasted so good with the crunch of the bok choy. This is a keeper for sure!

Sweet and Spicy Curry with Chickpeas

This was a delicious recipe. I served it over curried sweet potatoes. The flavors of the two dishes melded together wonderfully. The only change I made was that instead of the sweet chili sauce, I used garlic chili sauce (and much less of it). The meal was great the first day, but even better as leftovers as the flavors had more time to meld together.

Spinach Chicken Parmesan

I feel like this dish could have used some seasonings. I like the general idea of it, but it was just bland. I should have considered that when I was making it, but since I rarely salt things anyway, I didn't even consider it. It definitely needed both salt and pepper an even some garlic.

Ten Minute Szechuan Chicken

For not salting this dish at all and using low-sodium soy sauce, I still found it too salty. It definitely needed something to offset the salty of the soy sauce.

Glazed Meatloaf II

Butter Bean Burgers

I don't know what went wrong, but after cooking the burgers I could not get them to resemble anything beyond a puddle of slop. I followed the recipe exactly, but to no avail.

Lemon Pepper Zucchini

The texture of the zucchini was perfect, but I felt like the amount of lemon pepper was going to be WAY too overpowering. I only put a third of it on the veggies and still felt it was way too much.
