Hamburger Soup

The soup was looking great til I added the roux. That made it way too thick too fast. It's more like a chili now than a soup. I had to add a 28 oz tin of diced tomatoes to try to balance things out again. The soup had good flavour, but we like it a bit zippier so I did play with the spices as well. Overall though, the thickness of the soup spoiled it for me.

Potato Bacon Chowder

I doubled the recipe and it went well with a few suggestions from other readers. I cooked the potatoes in water, but drained them and added the chicken stock. I added a red pepper which gave it a nice flavor and some cayenne pepper for a touch of heat. The only thing I found - and maybe it was because I doubled it - it could have used more potatoes. But the flavor was good. I used low calorie chicken broth, and no fat sour cream, but did go for the 1% milk as I feared it would be too thin. It was really good!

Raspberry Star Cookies

I put 1 tsp of almond extract in the dough instead of the glaze. I found the dough too dry and it would not roll, so I added an extra egg and it was perfect. If you don't want the dough to have a flour-like taste you can sprinkle icing sugar down and use it on the rolling pin. It only takes a little. I then dusted the cookies with icing sugar when they came out of the oven. Very good!

Milk Chocolate Peppermint Bark

A nice easy recipe that has lots of flavor. I messed up a bit and used semi-sweet chocolate as it came in mint flavor. I think it would better with the milk chocolate. I used small candy canes which were a pain to unwrap, but I think when crushed they looked a bit more colorful than the big canes would.

Filet Mignon with Rich Balsamic Glaze

Fail proof!. Good idea to double the glaze and use the butter and brown sugar. If you want to keep the steaks medium rare while the glaze reduces, only cook them 2 minutes on the 2nd side - then cover them with tinfoil on a plate. The few minutes it takes to reduce the glaze will allow the steaks to cook that bit more under the foil.

Spicy Sweet Potato and Coconut Soup

It does have quite a bite to it and a lot of people will find it a bit too hot. Peeling and cutting the sweet potato into bite sized pieces and roasting in a bit of olive oil and salt/pepper saves time and mess. Also for those who like ginger but not slices of it could use the grated ginger you can buy in the stores. Then the flavor is there but not in slice formed. I also roasted a bit more potato and puree'd it with some of the broth to slightly thicken up the soup.
