I doubled the recipe and it went well with a few suggestions from other readers. I cooked the potatoes in water, but drained them and added the chicken stock. I added a red pepper which gave it a nice flavor and some cayenne pepper for a touch of heat. The only thing I found - and maybe it was because I doubled it - it could have used more potatoes. But the flavor was good. I used low calorie chicken broth, and no fat sour cream, but did go for the 1% milk as I feared it would be too thin. It was really good!
