Chicken Noodle Casserole I

Yummy!!! My changes: I used low fat soups and sour cream, and added italian seasoning, used about 8 oz whole wheat noodles, 1 lb. of chicken breast, added 1/2 bag frozen peas and one 10 oz bag frozen mixed mushrooms. Next time I'll add an additional whole bag of veggies, and cut back on the chicken to about 3/4 lb. Very good recipe!

Pumpkin Bread Pudding with Cinnamon Raisin Bread

5 stars because this was delicious-- but I did make some significant changes. Instead of French bread I used whole wheat cinnamon-raisin bread, then skipped adding raisins. Instead of the cream and soy milk, I used 2 cups whole milk. Instead of puree I used a can of pumpkin pie filling, and then didn't add the cinnamon. I cut the sugar to 1/4 cup, and added a cup of walnuts. Cooked in two square pans for 40 minutes- but next time will check it sooner. Absolutely heavenly dessert that everyone raved about.

Pumpkin Turkey Chili

This is so good!! I used one green pepper instead of the mix, and subbed a jar of salsa for the tomatoes. That seemed to fix the "bland" problem others wrote about. I threw everything into the slow cooker and cooked on high 1 hour, low 5 hours, then served over spaghetti squash. Super healthy and tasty meal, will definitely make this again!

Stuffed Butternut Squash

OMG!! This is so good!!! I made some changes based on what I had on hand. Used coconut milk instead of soy, peas instead of the sprouts, and brown rice. Also used 2 cups frozen butternut squash, which I boiled separately, added some sauteed onion, and cooked it all as a casserole. With the coconut milk, you could sub curry powder for the turmeric, though it was great with the turmeric. Will definitely make this many times!
