Extra Gingery Bread

I love this recipe! I followed it precisely except for the apple juice part. I forgot to grab some at the store so ended up using a 1/2 cup of water instead and it turned out just fine. The crystallized ginger is superb and I used a standard loaf pan. I had to bake it for over an hour, but the end result was a rich and delightful treat! Thanks for sharing!

Slow Cooker Root Vegetable Tagine

I carefully read reviews before making this recipe as I've never made anything like it before. I took some suggestions from other reviews and did a few other things differently. It came out quite good! I have a smaller crock pot so I ended up using 1/2 of a large parsnip, 4 large carrots, 2 large white sweet potatoes, 1 large white onion and added apricots, prunes and dates. For spices, I doubled the amount in the recipe and also added a hint of cardamom, fresh ginger (and a little of the ground) as well as a hint of curry powder. I used 2 vegetable boulion cubes and added water to about 1/2 inch above the mixture, (don't let the photo fool you-it's the before pic). I tossed all of the ingredients in a larger dish before cooking to ensure even flavor. After about 4 hours of stewing on low, this dish was extremely fragrant and tasty. I think with this recipe is very simple and versatile. I served it with white basmati rice-delicious! Thanks for sharing!

Vegan Red Lentil Soup

This soup is delicious! I did a couple of variations according to reviewers and had to improvise with what I had on hand. First off, I used a whole can of light coconut milk but did not increase the water, but decreased it to about 1 1/2 cups. I used acorn squash as I didn't have butternut. Another reviewer mentioned using fennel as I also did not have fenugreek. I tried fennel but will probably leave that out next time. Also, instead of tomato paste I used a can of diced tomatoes, added gharam masala and cumin in addition to the spices listed in the recipe. I love the spice and coconut flavor. Thanks for sharing!

Granola Bars II

This recipe is tasty and can be modified with nuts or dried fruit. By putting the granola bars into the refrigerator as soon as they are done baking, it helps the firmness.

Yogurt Spinach Dip

This was a great recipe. I made a double batch for a cookout and people loved it. I did do less mayo and more yogurt, but I also added artichoke hearts and chopped water chestnuts. Also instead of the herbs suggested, I added a pack of onion soup mix...Yummy!

Thighs on Rice

This was so simple and delicious. I cut down on salt by not using a boulion cube. I also added julienned baby carrots, sliced mushrooms and herbs (sage, thyme, garlic powder) to the chicken. This was the perfect comfort food on a cold evening.

Bhindi Masala (Spicy Okra Curry)

I liked how simple this recipe was. Since I couldn't find fresh okra, I used frozen okra that was already cut into 1 inch pieces. I also used one 14oz can of diced tomatoes and it turned out quite well. With the extra liquid from the tomatoes I had to add more spices. I also added some cayenne pepper for heat! Will make this one again-thanks for sharing!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Delicious! I cheated and used prepared cookie dough and froze it for about 2 hours- it made it so much simpler! 17 minutes in the oven worked perfect for me! Thanks for sharing!

Zesty Slow Cooker Chicken Barbecue

Per other reviewers I used fresh chicken breast. I followed the sauce recipe except I added a bit of cayenne pepper and cooked the chicken on high for 3 hours. Then I shredded the chicken and cooked it on low for an additional hour. I topped the sandwich off with sauteed mushrooms, red onions and pepper jack cheese. Very tasty-thanks for sharing!

Easy Indian Butter Chicken

This was delicious and quite easy. I followed another users advice and used 1 can of coconut milk instead of 3c of heavy cream. The flavor was fantastic. I did have to add a bit more masala (approx an additional 1/2-1tbs) simply because I like a robust spicy flavor. I served this dish with rice that had been steamed with cumin seeds and green peas. Thanks for sharing!
