Extra Gingery Bread
I love this recipe! I followed it precisely except for the apple juice part. I forgot to grab some at the store so ended up using a 1/2 cup of water instead and it turned out just fine. The crystallized ginger is superb and I used a standard loaf pan. I had to bake it for over an hour, but the end result was a rich and delightful treat! Thanks for sharing!

Vegan Red Lentil Soup
This soup is delicious! I did a couple of variations according to reviewers and had to improvise with what I had on hand. First off, I used a whole can of light coconut milk but did not increase the water, but decreased it to about 1 1/2 cups. I used acorn squash as I didn't have butternut. Another reviewer mentioned using fennel as I also did not have fenugreek. I tried fennel but will probably leave that out next time. Also, instead of tomato paste I used a can of diced tomatoes, added gharam masala and cumin in addition to the spices listed in the recipe. I love the spice and coconut flavor. Thanks for sharing!

Easy Indian Butter Chicken
This was delicious and quite easy. I followed another users advice and used 1 can of coconut milk instead of 3c of heavy cream. The flavor was fantastic. I did have to add a bit more masala (approx an additional 1/2-1tbs) simply because I like a robust spicy flavor. I served this dish with rice that had been steamed with cumin seeds and green peas. Thanks for sharing!
