Banana Sour Cream Bread

Wonderful recipe. I cut the recipe in half (but using 2 eggs) and used one 9x5 ceramic loaf pan. At 300, I found that I had to bake for about 1 hour 45 minutes (possibly due to ceramic vs. metal). Following other suggestions I topped with a cinnamon crumble (sugar, cinnamon, flour, butter) before baking and it melted into the middle of the loaf making it even more delicious. I found that dusting the loaf pan with sugar and cinnamon after greasing, not only gave it a crisp outer edge, but also helped it to slide right out of the pan. Thank you for the recipe. Definitely one I will make again.

Aaron's Missouri Burger

Great burgers! Made these with ground Bison. Followed the recipe exactly except omitted the red pepper. I followed others lead and mixed the night before which I believe resulted in the flavors really absorbing into the meat. The pack of Bison I bought was 1.25 lbs. and the mix seemed like I could have cooked right away so maybe the 1 lb quantity in the recipe is why some said the burgers wouldn't hold together. Served them on Pretzel buns. Delicious! Can't wait for warmer weather so we can try them on the grill!

Supreme Chicken

Rated a 4 due to alterations made after reading reviews of bland taste and dry chicken. I decided the dryness was likely due to over-cooking since after browning, boneless chicken breast should only need 30 minutes in the oven to be done. I did the following: Added salt, pepper and garlic powder to the flour mix. Reserved the flour mix for the sauce. Skipped the simmering in the skillet for 30 minutes part ... just browned the chicken well in the butter then put in a baking dish and covered with the mushrooms. Doubled the sauce ingredients (to use with side dish)... still added the water with some half & half and the reserved flour mix.. whisked till mixed well.. added the rest of half & half.. cooked till bubbly and thicker.. added lemon and poured over chicken and mushrooms.. baked 30 min. Like others, I forgot the cheese, but it didn't need it. Family loved it.. chicken was tender and juicy.

Modenese Pork Chops

Followed the recipe with only one caveat - after removing the chops from the pan, I mixed 1 tsp corn starch with approx. 1/4 cup cold water and stirred it into the sauce to thicken it a little. Sauce stuck to the meat better and made a nice gravy to drizzle over mashed potatoes. Very good. Used Pinot Grigio for the wine and unsalted butter to reduce the sodium.

My Mom's Parmesan Chicken

The wine definitely is the key to flavor on this. Used chicken tenders and rather than dab each piece with butter, I followed another suggestion and melted the butter and poured over the pieces prior to putting in the bread crumb/spice mix. Served over spaghetti with a garlic, olive oil, white wine sauce, sauted with fresh spinach and mushrooms. Topped with parmesan. Think I'll add roasted pine nuts the next time. Very delicious!

Sicilian Garlic Sauce

Awesome! Was looking for a quick olive oil and garlic sauce to make in a hurry and this was even better! Didn't have whole almonds, so I used just under 3/4 of almond meal. Also, the recipe didn't indicate whether to use the juice in the can of tomatoes, but I did and it was perfect. Following other's lead, I cooked it a bit to tame the garlic a little. Served over spinach and cheese ravioli, topped with parmesan. This one is already saved in my recipe box! Thank you!!

Chicken Milano

Wonderful recipe. Following others' lead, I doubled the sauce; also first, pounded the chicken and soaked in buttermilk for 1/2 hour, then dredged in flour (with salt, pepper & paprika). And after cooking chicken, used the same pan to saute garlic and then follow the remaining recipe. I agree with others that the only way to improve the recipe would be to add some white wine when cooking the tomatoes. It was delicious without it, however. Thank you, Marbalet!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Great Recipe! I altered just a bit for added good health. Added 2 tblsp ground flax seed meal, 1/4 cup quinoa flakes, and 1/4 cup oats (or oat bran works). Added a 1/4 cup extra applesauce due to additional dry ingredients. Reduced brown sugar to 1/2 cup and added 1 tblsp plus 1 tsp Stevia powder. Very moist and sweet, so could reduce sugar more. Made with strawberries the first time and they were delicious. Making with blueberries today - can't wait to try them.

Baked Ziti I

Very good! My kids said they would eat this every week. Made enough for at least 8 people. I made 3 adjustments: used italian sausage instead of hamburger. Sprinkled fresh chopped basil on top before the parmesan. And sprinkled some fresh grated romano cheese.
