Oven Roasted Ribs

The sauce for this recipe is really good, but is fairly spicy and I only used about a 1/4 cup Sriracha for chili sauce and ketchup for the rest. I put mustard on a second batch of ribs for the first hour of baking, and actually liked this batch more. Also note, since the sauce isn't added until the last hour, you can make the sauce after you put the ribs in the oven, no need to wait if you're running a little short on time.

Creamy Potato Leek Soup II

This was my first time making a leek soup, and this was a great base recipe! I added some things: celery, mushrooms, and leftover rotisserie chicken. I also used half heavy cream and half skim milk. I like the way it turned out an will be using this recipe again! Thanks!

Herb-Stuffed Red Peppers

This recipe is a great start at these peppers, but I think needs a few notes. The recipe as we made it makes more stuffing than 2 peppers we've started using 1 pd of ground beef and using up the 6 pepper pack available at Sam's Club. Also, we've started microwaving the peppers a 2nd time after baking, because they are too crisp for my taste, but are always perfect the next day for we treat them this way straight out of the oven. This is one of our favorite recipes (we have used basil or parsley because we didn't have it on hand, and the recipe still turns out fabulous!

Chicken Enchiladas II

This recipe got such great reviews that I was pretty excited about making it. In my opinion, it's not that great. I thought the whole thing tasted like cream of mushroom soup. Even though I did spice it up for my own tastes, it wasn't enough.

Bread Pudding with Whiskey Sauce III

This was the first bread pudding I've made and it turned out GREAT! I followed the pudding recipe but used some dinner rolls we had left over and I baked it at 350 for 45 minutes as recommended in some reviews. For the sauce, I used a little less of everything because I didn't want as much sauce (we're only two people) and used Amaretto instead of whiskey because I had it on hand (also recommended by other reviews). It is a great treat, I'm going to bring it to a casual get togehter tonight, and I'm sure it will be a hit!
