Acapulco Chicken

Honey Walnut Shrimp

These were great. The only errors were my own. Next time I will make more batter to really coat the shrimp, and cut off the tails so it's easier to eat. I did have to thin the Mochiko though with a little extra water to make it thin enough to dip the shrimp.

We did the white sauce differently and it was amazing. We used sour cream instead of yogurt and left out the jalapeno, capers and cayenne and added 1 1/2 adobo chipotle peppers. It was so good!

Basil Butter

My husband made this for the second time recently with our left over basil from another recipe. We had it on steaks...so awesome. Then we froze in the rest and just thawed it tonight, spread it on french bread and made the MOST fantastic garlic bread! We didn't have 15 leaves of basil, we probably halved that, I thought that was enough to make it subtly basil-tastic.

Garlic and Herb Lamb

My husband and I do not really care for lamb, but we've really WANTED to like it. I bought a leg of lamb on sale and was trying to make something phenomenal. This was it! We both ate more than one piece, and we had to stop the children! I didn't change anything, but I used all the same amounts for a 3 lb. leg. Cooking time was the same.

I will be making this tonight for the first time but to the person who made the above comment "In Filipino cuisine, Adobo refers to a common and very popular cooking process indigenous to the Philippines where pork or chicken is slowly cooked in soy sauce, vinegar, crushed garlic, bay leaf, and black peppercorns, and often browned in the oven or pan-fried afterward to get the desirable crisped edges. "

Two-Salmon Strata with L'Evanjules

I actually made the recipe but did make some changes. I went with Brie as the cheese and I dislike capers so I used jarred red peppers instead. Everyone really liked it and finished the whole casserole off that evening! However I agree they made the recipe overly difficult using L'evanjules and not explaining what it is, I didn't find it anywhere.

Eggs Benedict

3 Tbl is a lot of lemon. Next time I think I will take the suggestion to only use 1. Also this makes A LOT of sauce, I will half it next time as well. I used the blender/microwave method suggested and that worked great. Serving suggestion: Put a dash of dill on top. It's fabulous!
