Lentil and Smoked Sausage Soup

I made several modifications, but loved the recipe! It was very flavorful and very easy. When I was at the store, I forgot that it called for cabbage. I had some carrots at home, so I included those instead. It was GREAT! I used 4 cloves of garlic instead of one (because one clove of garlic in a nice stew is pointless), kielbasa sausage, and low sodium chicken broth. It didn't need a lot of salt because the sausage provided so much flavor. You could do so many variations with this, using whatever is on hand. A keeper!

Chicken Korma II

I am a huge fan of Korma, and I have been looking for a couple of years now for one that resembles the version I eat at my favorite Indian restaurant back home. This is the closest I've found... the flavor is incredible, and it's very easy to make!

Chicken Piccata II

I wish I could just drink this sauce; it was so good! I did as some others suggested and did not cook the chicken in the sauce: I poured the sauce over the chicken when I served it. I also doubled the sauce (mmmmm), added 1 tsp or so of sugar, and added a little cornstarch to thicken the sauce. Will definitely make again!

Chantal's New York Cheesecake

DEEEE-LICIOUS! Yum! The only thing I would do differently is prebake the crust; mine got a little soggy after sitting in the fridge! I used all my ingredients at room temperature and let it cool in the oven for about 4 hours before chilling and I had no cracks; it turned out PERFECTLY. Go Chantal.

Hot Artichoke Spinach Dip

Delicious delicious delicious! I, like others, used sour cream instead of the mayo; I also added a bit more garlic, about 1/4 tsp cayenne pepper, and used the cheese I had lying around (which happened to be Sargento Italian blend shredded cheese; I threw in a handful or so and sprinkled another handful on top). NOTE: This does NOT fill a 9x13 pan! Use a square baking dish instead.

Baked Fresh Cherry Pie

Ahh, so good! I actually had about 1.5 cups of black raspberries from my yard, so I combined those with 2.5 cups of cherries and it was WONDERFUL! I used the "Butter Flaky Pie Crust" from this site, and ahh... so yummy!

Butter Flaky Pie Crust

This crust was fabulous and SOOO easy! It is my first real pie crust... in the past, I've just worked with pre-made crusts. I was nervous about it coming out correctly, but if you just make sure to keep everything cold and don't handle it too much, everything will be just fine! Easy as "pie"! Oh, and it holds its shape very well if you are using cookie cutter shapes for your top crust :)

Hot Peanut Sauce

MMM MMM MMM!! So good, and such a great consistency. I didn't have regular peanut butter, so I used what I had-- one of those new peanut butter and honey mixtures. I also added some ginger paste and a little bit of fresh minced garlic. It was WONDERFUL! I doubled the recipe and poured over pasta with sauteed carrots, mushrooms, garlic and green onions cooked with some ginger paste and Thai red curry paste. SO GOOD!!

Cranberry Baklava

Peach Crisp III

DELICIOUS! I had two peaches in the house as well as a ton of black raspberries from my yard, so I made a 1/3 peach, 2/3 black raspberry crisp. It is out of this world! The peaches and black raspberries go so well together--way better than red raspberries. I also did not have the granola, but I used extra oats and flour. I wish I had some vanilla ice cream to go with it! I will definitely make this one again.

Savory Grilled Potatoes

Delicious! I didn't use the mayo and did add an extra clove of garlic. I also drizzled with olive oil instead of butter. They were fabulous! I'm glad we made extra. :)

Chicken Pot Pie IX

I thought this was yummy! I added a couple of cloves of garlic to the onion mixture, added a pinch of cayenne, and substituted corn for the celery (I hate celery!). I also grated some cheddar cheese onto the crust and baked it on. Good stuff!

Mmmm, these pancakes are PERFECT! I have long searched for a buttermilk pancake recipe that is just right, and this is the one. It will be my go-to from now on. They were tender, flavorful, and cooked perfectly. I did not make any modifications.

Eggplant with Garlic Sauce

Eggplant with garlic sauce is my favorite Chinese dish, and this recipe is very good. I modified this recipe based on several others' suggestions. I seasoned the eggplant with salt and pepper, and then added fresh garlic to the stir-fried eggplant (5 cloves). I also added more oyster sauce, a dash of fish sauce, and some sesame oil to the sauce. I topped it with green onions, and it was just delicious! I think it will be even better tomorrow after it sits in the fridge.

Limehouse Chicken

We loved this chicken! It was easy to make, and very flavorful. I didn't think one lime would provide enough flavor, but it did! I made this according to the directions, with the addition of a little garlic powder in the flour mixture. We will definitely make it again, and a double batch next time.

Honey Glazed Ham

Nom! This was delicious, and easy to prepare (but not hands-off, since you had to baste so often). The ham was so moist and juicy and flavorful! I think next time, I will try to put a brown sugar crust around the ham, the way the Honeybaked store does, because the skin got very dry and tough despite basting. The inner part of the ham is GREAT, though! I also think I will either omit the cloves or use a small amount sprinkled on top next time. The flavor of them was a little strong for our tastes.

Lemon Horseradish New Potatoes

During our dinner, we kept spontaneously exclaiming "I love these potatoes!" "These potatoes are so good!" Definitely a keeper. I made them according to the recipe, except that I uncovered them for the last 15 minutes or so. These will be a staple in my house, and I bet there are a million variations you can use with the basic recipe.

Grilled Tilapia with Mango Salsa

AHHHH, SOOOO GOOOOOOD. I made chicken with the marinade instead of tilapia since my (crazy) husband doesn't eat fish. I ate half the salsa with a spoon before the chicken was done. This is definitely a keeper--easy, tasty, fresh.
