Gourmet Mushroom Risotto

Reviewed: Mar. 5, 2008
Yum! I can never make enough of this stuff. I could just eat it for weeks.

Roasted Red Pepper and Potato Soup

Reviewed: Mar. 5, 2008
Pretty good, although too potato-ey and not enough red peppery for my taste. I put this in the blender to make a creamy soup (since, unlike the picture would lead you to believe, the directions do not say to do!). I served in sourdough bread bowls, which made a really easy meal look elegant. Next time I think I'll cut down on the potatoes and do more peppers. The husband loved it.

Hot Artichoke Spinach Dip

Reviewed: Mar. 5, 2008
Delicious delicious delicious! I, like others, used sour cream instead of the mayo; I also added a bit more garlic, about 1/4 tsp cayenne pepper, and used the cheese I had lying around (which happened to be Sargento Italian blend shredded cheese; I threw in a handful or so and sprinkled another handful on top). NOTE: This does NOT fill a 9x13 pan! Use a square baking dish instead.

Chicago Dip

Reviewed: Mar. 5, 2008
When I first made this dip, I didn't really care for it, but after letting it chill in the fridge overnight, it was pretty tasty. I had some leftover grated carrot from making a Thai chicken pizza so I mixed that in as well, and it definitely worked well... so don't be afraid to throw in other veggies!

Chantal's New York Cheesecake

Reviewed: Jan. 9, 2008
DEEEE-LICIOUS! Yum! The only thing I would do differently is prebake the crust; mine got a little soggy after sitting in the fridge! I used all my ingredients at room temperature and let it cool in the oven for about 4 hours before chilling and I had no cracks; it turned out PERFECTLY. Go Chantal.

Chicken Piccata II

Reviewed: Jan. 1, 2008
I wish I could just drink this sauce; it was so good! I did as some others suggested and did not cook the chicken in the sauce: I poured the sauce over the chicken when I served it. I also doubled the sauce (mmmmm), added 1 tsp or so of sugar, and added a little cornstarch to thicken the sauce. Will definitely make again!

Chicken Korma II

Reviewed: Jan. 1, 2008
I am a huge fan of Korma, and I have been looking for a couple of years now for one that resembles the version I eat at my favorite Indian restaurant back home. This is the closest I've found... the flavor is incredible, and it's very easy to make!

Mouth-Watering Stuffed Mushrooms

Reviewed: Jan. 1, 2008
My husband and friends loved these, but I thought they were a little too cream-cheesy. I'll tinker with it and see what I come up with :)

Ali's Amazing Bruschetta

Reviewed: Jan. 1, 2008
I loved this; it had such a powerful flavor with all those fresh herbs! This was the perfect way to use the herbs in my garden. Tasted very fresh and light! Will definitely make again.

Roasted Tomatillo and Garlic Salsa

Reviewed: Jan. 1, 2008
Delicious flavor (I passed the recipe along to several friends), but INCREDIBLY spicy. Blending the jalapenos releases more of the capsaicin (the hot stuff), so if you are not going to leave the peppers chunky, you might want to cut down.

Authentic German Potato Salad

Reviewed: Jan. 1, 2008
Really, really good! A great change from the usual mayonnaise-y potato salad made in my family. Very tangy and more substantial than the mayonnaise-y stuff. We liked it best served hot.

Chicken Enchiladas II

Reviewed: Jan. 1, 2008
We love these in our house! I have made them several times, and my husband thinks they are the greatest things in the world (and he doesn't even really like Mexican food). Chef's note: Make sure you buy the good cream of mushroom soup... I bought the store brand once, and the large chunks of mushrooms are kind of funky in this recipe. Stick with Campbell's (or similar) because theirs does not have this problem.

Herb Roasted Pork

Reviewed: Jan. 1, 2008
Oh my goodness, this recipe is amazing. The glaze was just DELICIOUS; tangy and full of flavor! I forgot to add the glaze during the last 30 minutes of cooking, so I only got to add it about 10 minutes before it came out of the oven, but it was still marvelous. It will be even better when I do it the right way!

Kickin' Collard Greens

Reviewed: Jan. 1, 2008
Mmm mmm mmm! These were great... made a Southern girl living in the North very happy! The only change I would make is that there was a little too much bacon in every bite for me... I like my greens fairly pure. I think I'll just leave the bacon strips whole so all that good flavor gets in there but I don't have to let the pieces interfere with my greens :)

Absolutely fantastic. It has that great restaurant-style texture I'm so fond of, and the flavor is outstanding.

Roasted Brussels Sprouts

Reviewed: Jan. 1, 2008
These things were surprisingly tasty! I was shocked when my husband (who doesn't like to eat veggies) suggested that we try brussels sprouts. I tried this one since it was so simple and easy, and they turned out GREAT. Pleasantly surprised! I cut my sprouts in half so that they cook faster and I get more of the yummy charring.

Spanakopita (Greek Spinach Pie)

Reviewed: Jan. 1, 2008
Outstanding! My husband and I gobbled this up so fast! It is even better after it has been refrigerated--all those flavors mingle together... then heated in the toaster oven. Mmmmmm!

Michelle's Coconut Chicken Curry

Reviewed: Jan. 1, 2008
We weren't crazy about this dish. I was prepared for an extremely flavorful sauce like the kind I get at my favorite Thai restaurant, but this one lacked the intense flavor I was looking for. Oh well.

Fluffy Peanut Butter Frosting

Reviewed: Jan. 1, 2008
YUM YUM YUM! My husband, who adores peanut butter, adored this icing. It was so fluffy and light, not thick and gloopy like a few others I have tried. The flavor is perfect.

Greek Lamb-Feta Burgers With Cucumber Sauce

Reviewed: Jan. 1, 2008
The only reason I am giving this 4 stars is that I haven't tried this entire recipe yet. I needed a good tzatziki (cucumber sauce) recipe, and this one was definitely great. I would give it 5 stars. The burgers sound good, so I might make them some other time :)
