Sugar Cookies with Buttercream Frosting

I'm rating the cookies only; I didn't make the frosting. However, the cookies were fabulous! I mixed them up in no time, and the dough was easy to roll. I rolled it into a rectangle and then just cut the dough into squares to avoid having any scrap dough to roll again. These cookies were not dry at all. They were tender, slightly crispy on the outsides, perfectly sweet and buttery. Remember, these were meant to be frosted, so the cookie itself isn't super, super sweet. I think they are great on their own, though. Try these! They are addictive!

Heavenly Chocolate Mousse

SOOOOO good! Next time I'm going to use milk chocolate because the semi-sweet was slightly bitter to me. I melted the chocolate mixture in the microwave while I whipped the cream. I transferred the cream to the fridge and cooked the eggs while the chocolate cooled. Make sure you wisk the egg mixture nonstop while heating it over VERY LOW heat. As soon as it starts to smell like cooking eggs, it is done. If you follow the directions, the consistency is perfect and the taste is amazing!! Also, definitely let it set up overnight for best texture.

Chocolate Syrup

This was very good. We added some milk chocolate chips to cut the cocoa powder flavor. It didn't get quite as thick as I would have liked, but it was quick, easy, and saved a trip to the store.

Roasted-Vegetable Stock

This was delicious! I was sick and drank it by itself. I used the leftovers to make Mexican rice instead of chicken stock. It was great! I will definitely make again to freeze!

Blueberry Muffins II

These were delish! The first time I made them, the batter seemed really thick, so I had to add a little bit more milk. The second time, I halved the recipe but kept the same amount of milk as the original recipe. I also melted the butter instead of creaming it with the sugar. Very quick and easy to satisfy a muffin craving with all on-hand ingredients!

Unbelievable Chicken

This was really good. The chicken was extremely moist. The marinade really flavored it well. I was worried about the amount of acid, but it ended up being fine. I cut the chicken into cubes and cooked on the grill with skewers to make kabobs. I was eating leftovers cold straight out of the fridge, and they were still moist and juicy.

Heavenly Angel Food Cake

I was really intimidated to make this because angel food cake seems like it would be hard to make. However, it came out great and I even royally screwed it up. First, I made it and then watched the "Making an Angel Food Cake" video afterward. In the video, she whipped her eggs to a much stiffer peak than I did. Then I didn't have an angel food cake pan, so I used a jumbo muffin pan. It worked perfectly! I also sprayed it with cooking spray, which the video said later not to do. Woops. I won't do that next time. I also think I slightly undercooked it. With all those screwups, it was still very, very good. I will most definitely make this again and do it right next time!

Grandma's Fresh Apple Cake

Soft Sugar Cookies IV

These are perfection. I have tried three different sugar cookie recipes recently, and these were the best. Try them with the "Decorator frosting" recipe on this site. WOW! I actually used all butter instead of half butter/half shortening. They were still very soft and delicious.

Boiled Chicken

This was the most tender, juicy chicken I have ever cooked. I can't wait to use it for chicken tacos, burritos, and soups! I added some garlic and salt to the water. Also, I let the chicken cool down in the broth before shredding it. After removing the chicken, I put the bones back in the broth and let it simmer for another couple of hours to make some AMAZING stock. I let the stock cool in the fridge overnight and then removed the fat the next day for a virtually fat-free stock. Next time, the only thing I will do differently is add some fresh parsley and thyme to the stock to round out the flavors. I got everything to make this for around $4, and it made 4 cans' worth of stock and several cups of shredded chicken. That is a steal both for my wallet and my health!! I will continue to make this every single week because it is so healthy and so versatile.

Easy Sugar Cookies

These were pretty good but were WAY too sweet if you are adding frosting. These cookies stand alone pretty well, but are almost sickeningly sweet with frosting on them. I do love that you don't have to roll these. Mine came out looking picture perfect and golden brown on the bottom, crunchy outside and soft inside. Out of three different sugar cookie recipes, these were the only ones that didn't get completely eaten.

American Lasagna

The sauce was great. I made two lasagnas and froze one. This is very time-consuming, but it is worth it. I only used 2 pounds of ground beef and it was more than enough to make two pans worth. I also only used 1 1/4 pounds of mozzarella for both pans.

Whole Grain Waffles

These are SO good. I used half whole white wheat flour and half whole wheat pastry flour, and you seriously cannot tell they are whole wheat, not "wheaty" at all!! I also replaced the oil and applesauce with coconut oil. Wow!

Flourless Peanut Butter Cookies

These are really good. They get 5 stars for being so easy. I used half brown/half white sugar. I am snowed in and needed something sweet. I had the ingredients for these, and they were so simply. Loved them!

Southern Style Thanksgiving Green Beans

This was a great base recipe. I used beef broth instead of water and bacon instead of a ham hock. I also am not a huge vinegar fan, so I only used about a tablespoon total. It turned out really amazing with these changes! I cooked these beans in the crockpot for about six hours on low.
