Herb and Garlic Roast Tenderloin with Creamy Horseradish Sauce

I've made grilled beef tenderloin roasts in the past that were out of this world, so I figured this one would be good, but my expectations were somewhat low. But I wanted a recipe that I could make in the house. Well, this turned out to be phenomenal!! The rub was delicious, and the horseradish sauce complimented it so well. We all loved it!! My roast was slightly smaller, but the cooking times were just about the same as the recipe stated. Perfect!

Old Fashioned Mac and Cheese

FINALLY!! A mac and cheese recipe my entire family can agree on!!!! My husband and I like one thing, my kids like another. This recipe solved the dilemma! It is easy to make, and delicious. Even my very particular brother in law admitted it was "pretty good." (high praise, I can assure you!) The one change I make is to omit the onion and add some onion powder to the bechamel. We all felt the raw onion was too harsh. I would have simply sauteed them, but the littles can detect the presence of onions in any food, lol, so as a compromise, I used the powder. That satisfies everyone. Thanks so much for sharing this-now it is the one mac and cheese recipe EVERYONE asks me to make!!

Firecracker Scallops

This was really delicious!! I was not sure about the combination of flavors in this dish, but everything worked very well together and it was very easy. Other reviewers were right about it being salty-the next time I make it, I will lower the amount of garlic salt and add garlic powder to replace it because I think the bacon grease adds a key flavor component to the dish. Also, because I did not have horseradish sauce, I mixed up my own with horseradish, mayo, a touch of vinegar and pepper (you could make it with sour cream too, but I have a dairy issue). One other thing that I did was streamline in terms of pans used. I cooked the bacon in the microwave, then poured off the drippings. Also, I used a broiler safe skillet, and rather than move everything to a baking dish, I just added the final ingredients to the pan and put it under the broiler. It tasted amazing and dirtied fewer dishes! We will definitely be making this again-thank you so much for the recipe!!

The Best Bean and Ham Soup

We loved this soup! My in laws gave me their leftover Easter ham/bone, and my husband asked me to find a soup recipe with beans. Not being a bean lover, I had to seek one out and thankfully came across this winner. I made it just as is, though I ended up having to add more chicken broth as the day went on. And I have to say, again, as someone who is not a bean lover, my first taste sold me as well! This really is a hearty, delicious soup. And very easy, as long as you have plenty of time! Thank you for sharing!

Black Beans with Pico de Gallo

Delicious!!! We used Pico de Gallo we had already mixed up, so I can't comment on the Pico de Gallo, but the beans couldn't have been easier, and the bacon grease gave them just wonderful flavor. We will be making this again and again! Thank you for sharing your recipe!

Fish Tacos

This is our go to recipe, and the only one my husband will eat for fish tacos!! The sauce is just delicious, spicy but not overly so. That and the cabbage really are all you need. Thank you so much for sharing this wonderful recipe!!

Old Bay® Shrimp Salad

Yum!!! Very simple and delicious. We had leftover steamed shrimp which were already seasoned with Old Bay, so I cut back on the seasoning in the recipe-I think 1 1/2 t. would be enough even with unseasoned shrimp, but it depends on how much Old Bay you prefer. This is a perfect light lunch!

Hot Mexican Dip

This is great! My sister in law makes a similar dip that is very labor intensive, but this one is extremely easy, and just as good!! Really easy to adjust the heat level on this too. An all around great party recipe. Thank you for sharing!

Hot Corn Dip

FABULOUS!! Thank you so much for sharing this recipe!! It got RAVE reviews with all of ourparty guests this weekend, and I was asked for the recipe a couple of times. We really love this, and will be making it again-so simple and delicious!. I think next time we will make it a *bit* spicier, but just as is, this one is definitely a WINNER!! Make it for your next party-you'll be glad you did!!!

Hot Shrimp Dip

This dip was ok. My guests were not wowed, BUT I am known for my crab dip, so I think they were expecting that. I think this is a good base, and with a few changes could be a dip my seafood loving family could love!

Texas Caviar with Avocado

After reading the reviews, I made a few changes-used black beans, Rotel and added corn, and we think this dish is yummy! Next time I will add some minced garlic and cilantro to the mix as well, but this dish is easy and delicious. Perfect party food! Thank you for sharing your recipe, Kim!
