Quick Chicken Marsala
This dish was absolutely delicious! I used regular cream of mushroom rather than golden mushroom (didn't have any) but it was amazing. Super fast. I sauteed fresh shrooms in minced garlic and a smidge of olive oil before adding them. This is a keeper and so easy for weeknights!

Balsamic Chicken and Pasta
I made a few changes but my fiance said this was the best thing I ever made for him. I didn't have time to marinate the chicken 2 hours so here is what I did: I combined the balsamic vinegar and olive oil and set the chicken in there for about 30 min. Meanwhile, I chopped the garlic and sauteed with mushrooms and two dried basil leaves (didn't have fresh) until brown. I browned the chicken then added the garlic, mushrooms, and basil back in as well as 2 cans of diced tomatoes (1 fire roasted and 1 italian). I let this cook and simmer for about 15 min and served with pasta. It was delish.

Cafeteria Macaroni and Cheese
This is definitely the best cafeteria style mac and cheese I've made. I used a mixture of cheeses rather than just the cheddar. This mac and cheese is actually better as a leftover. Seems to pick up more flavor. I would make it the day before you plan to eat it. Very filling and tasty! ;)
