Funnel Cakes I
These were AWESOME but I have to admit I added 1/2 cup sugar and 1 tsp of vanilla after reading reviews first. The recipe gave us 4 good size cakes that we sprinkled powdered sugar. I put the batter in a giant zip bag and cut tiny hole in corner to use for a funnel. I only made one the first night and the rest this evening. They taste even better. I ran out of veg oil so used a combo of olive oil and peanut oil(yes we were desperate for a funnel cake fix as are town is having a two week festival, LOL). The batter kept up perfect. Today i added some sliced peaches that had been soaking in sugar. MMmmmm YUMMYYYYYY!!!!!!!!! Just wish i had some vanilla ice cream LOL! A MUST TRY!!!!!!!!!!

Maple Salmon
ABSOLUTELY AMAZING!! Due to Lupus it has been recommended I eat more salmon. I am not a big fish person so i dont eat it often but this recipe was amazing and i will definately be eating more of it. I used sugar free maple syrup instead and it didnt lose any taste!

Easy Meatloaf
Ive been making this recipe 3 years now and its one of my favorites! When I made this recipe everyone moaned at the sound of "meatloaf" but after the first bite they were hooked. I now have to make 2 batches when i make this recipe as there is never enough. I never add all of the milk, i add half and see if i need the rest later. I use minced onions as we never have regular onions in the house. I also used 7 grain bread that was toasted then grated in place of bread crumbs. It gives it a great texture and taste. You can always substitute and add more for the consistency you want. Where the guy got soup on one of the other reviews i dont know. LOL! I always double the sauce but i use spicy mustard thats already prepared(i also squirt a tablespoon in the meatloaf mixture), the brown sugar sauce gives it a great flavor. My family loves it!
