Kentucky Pecan Pie

I saw this pie had great reviews, except someone who said it was too sweet. A pecan pie is sweet, they are supposed to be very sweet, hence the large amounts of sugar and corn syrup. This recipe was perfect, my sister always won the grand prize ribbon for pies with a pecan pie that tasted just like this. She would take halved pecans and carefully arrange them on top so it looked perfect just in case you want to try it out in a competition. Lastly, this pie is not the sweetest pecan pie I have ever tasted, there are some that make your teeth hurt from the sweetness, this is not one of them- this one's a keeper!

Sopapilla Cheesecake Dessert

I took this to a potluck, and it was well received, but I thought it was a bit too sweet. I will cut some of the sugar when I make it again to better taste the tartness of the cream cheese. There was another one of these desserts at the potluck, but I was told by a couple of folks that mine was better as it wasn't too cinnamony as the other one was. Looks like this is a dessert that is gaining in popularity.

Baked Chicken Wings

I use this recipe for all cuts of chicken (whatever is on sale on shopping day!). It is absolutely the tastiest recipe for chicken and super easy to throw together. Looking at the ingredients, it doesn't look like much, but the flavors all meld together to create my family's favorite way to cook chicken.

Busy Day Ham Bake

I used crumbled crackers instead of the bread crumbs and added more ham. This recipe is an excellent way to use leftover ham. Picky husband went back for seconds. As for using corn instead of broccoli, as someone else did, I don't think that would mesh well, maybe some Italian blend vegetables if you were out of broccoli.

Chicken Pot Pie IX

I make this in a clay deep dish pie pan using the pie crusts that come rolled up and it always turns out great, that is if I add a little more milk too make sure it doesn't turn out dry. I also cook it on a lower oven temp and I never have leftovers!

Chocolate Cavity Maker Cake

Make this cake when you need a chocolate fix- I made it for my family's Christmas party and everyone loved it. It is pretty simple to throw together so it makes a great potluck dessert- easy to transport too since you don't have to worry about icing.

Easy Quiche

This is my all time favorite quiche recipe. My family just devour it and it is simple to make. Sometimes I use spinach and mushrooms instead of broccoli. It's very easy to modify and always comes out great.

Simple Whole Wheat Bread

Wonderful tasty bread- when making it I thought it was a bit too much honey because I don't like sweet bread, but it tasted great. It also had just the right amount of salt. I even used all purpose flour instead of the bread flour and it still turned out perfect.

Transparent Pie

Chorizo and Lentil Stew

I left out the turmeric and cut the celery down to one rib. This was delicious and very filling, although my family couldn't be tempted to try it, they're not big lentil eaters. This one is going in my favorite recipes binder!

Crunchy Rice Casserole

I usually make a casserole that calls for cream of mushroom and cream of chicken. I had no cream of chicken so I searched and found this, it is very good and can be easily modified making this a great recipe for when your pantry is not well stocked. I added a clove of garlic to the meat and cut up pieces of block cheese since I was out of shredded cheese. I also added the soup-cheese mix to the rice before topping the meat. I was out of corn flakes so I had potato chips or crackers to choose from for the topping and picked the crackers. My picky kids and husband all loved it.

Venison Stew II

I added more water and cooked it in the crock pot. It went fast- this stew has excellent flavor, even my picky kids were asking for more. You could add any type of root vegetable you had on hand.
