Wow! As good as any restaurant. I followed some of the recommendations. My teens pick at tomatoes, but by blending them with my hand-held food processor, it was perfect! Didn't have chili peppers on hand so I used a small can of diced chilies. Although I like fresh, this is definitely the way to go. Heavy cream not necessary. I warmed up a pinch of non-diary creamer and it was just fine. This recipe is a keeper. Whole family loved! Thanks Gerry.

Cousin David's Slow Cooker Brisket

Delicious, though I made 1 change.....only had one bottle chili sauce. Added 1 cup of red wine in lieu of the 2nd bottle. GREAT. Will make again. Came out tender with lots of sauce. Side dish worthy of adding is Oven Roasted Red Potatoes (add carrots to roast too!)

J.P.'s Big Daddy Biscuits

Definitely would make these again. Fluffy. Tasty. Followed other prior suggestion - used 4 T buttermilk and 3/4 c milk. Used 2 1/2 t baking powder and 1/2 t baking soda. Used cold butter rather than shortening. ** make sure to only roll them 1 " thick - first time I made them too thin.

Southern Peach Cobbler

Topping too sweet for me. I much prefer the shortcake type recipe. This one comes out pretty but the topping competes too much with the Yumm of the peaches themselves.

Sweet and Spicy Curry with Chickpeas

This is a keeper! Yummm...makes my mouth hum. I followed other's tips. Made my own 1/2 c sweet chili sauce (ketchup, honey & Sriracha); used 2 cans garbanzo (1 might have been fine) and 1 cup lite coconut milk. Did it all in my electric skillet. Put over rice. Fast, delicious, one-of-a-kind.

Grilled Marinated Shrimp

Perhaps I am too picky, but this was nothing special. I love the Lemon Ginger Shrimp found on allrecipes.com MUCH more. (esp if adding 1 T bourbon whiskey!) This recipe lacked flavor, even when I added more hot sauce. Just nothing to write home about.

Tangy Citrus Chicken

Easy to prepare. Sauce was pretty good, but sauce is wasted unless you accompany w/ rice. Otherwise, decent sauce is left behind to sit in the pan and the chicken is only mildly interesting. I added a few dashes of hot sauce as was suggested by another review.

Simply Lemon Baked Chicken

I would say it was decent but did not knock my socks off. I was seeking a more lemony chicken. It was very tender and great to use leftover chicken for other dishes, but the recipe itself was just slightly above average.

Pistachio Crusted Chicken

I liked this, as did my teens and husband. Moist, good flavor. I pounded the breasts thin as another rater suggested rather than strips. Agree that the dipping sauce (raspberry preserves and red wine vinegar) is a good accompaniment.

My Amish Friend's Caramel Corn

Made this with my son as part of a raffle basket for his Marching Band. It was easy and fun. Followed the tip about adding couple dashes of cayenne to brown sugar / butter mixture to give it a hint of heat!

Delicious. Not time consuming! Will absolutely make againg. Only suggestion is to cut the pepper down to 1 tsp. I love pepper but it was too much. I was surprised no one else commented about that,

Cola Onion Pork Chops

These were OK. A bit on the dry side. I have other pork chop recipes I like better. However, if you are making this recipe, I recommend 20 min on a side ont 30 per side.

Ropa Vieja

Very good. Smells delicious while cooking. I too subbed Rotel tomatoes. Jalapenos are included in the can. Very flavorful. Make it like a burrito with black beans and cheese. Only gave it 4 stars becaue my boys are not fans of tomatoes but till liked it.

Prosciutto Wrapped Chicken Breasts with Orange-Cranberry Jus

I would probably NOT make again. Turned out fine but sauce lacked something. I love proscuitto, and chicken and cranberries, but this was just fair, in my opinion.

So quick it's almost embarrassing to call it a recipe! Another wonderful idea: top some with a fresh raspberry instead of the pecan! I had them on hand and was short on pecans...equally good.
