Mexican Bean Salad

Just made this for tomorrows picnic....AWESOME!!! Cut the oil to ~ 1/4 C and added two diced avocados. Came out great, can't wait to have more tomorrow! As with most recipes, using fresh ingredients makes it even better, so I squeezed one lime and half a lemon.

Mojo Grilling Marinade

I've used this on chicken and pork, and both came out GREAT! Excellent marinade and gives meat some bold flavors. No need to change a thing, a definate keeper!!!

Cilantro-Lime Dressing

I've planted an herb garden this year and LOVE this recipe. I've made it twice in the last week and now may have to buy more cilantro plants. It's great on salads or as dipping sauce for chicken, pork, veggies, etc. No need to change a thing, but didn't have whole ginger the second time I made it so used dried ginger, and came out great!!

Apple Squares

Made this for myself and two others and we almost ate the whole thing and that was after a pretty heavy meal!!! Only change was I used sliced almonds (which I toasted for a couple minutes in a dry pan over medium heat) since I didn't have walnuts on hand. Came out great!!!

Chicken Marsala

Awesome!!! Add some onions and garlic as some others suggested. I doubled the recipe and didn't have a big enough pan for all the chicken so pulled it after brown and put into a 400 degree oven for 10 to 15 min while finishing the sauce. I used super market wine and sherry so when making the sauce, I also added some of the red wine that I was drinking while cooking. Also, I added some milk/corn starch mixture to help thicken sauce. It came out great and I was treated to rave reviews by my guests. Would highly recommend!!!!!!!

Chicken Cordon Bleu II

Just made this recipe for friends and everyone raved how good it was. Served it with the Gourmet Mushroom Risotto (another allrecipes favorite) and came out great. Followed the recipe exactly and wouldn't change a thing. A definate keeper!

Red Skinned Potato Salad

Great recipe! Just made it and my wife and I couldn't wait the couple hours to try it. The flavors are awesome. A couple changes based on what was in my fridge. 1 C mayo and 1 C sour cream, carrots replace celery, green onions and just a tbsp of white sugar to balance out the sour cream. I also added so shreaded sharp cheddar as suggested by another reviewer. I will definately be making this again!!!

Apple Bread

This recipe is excellent!! I took some tips from other reviews and substituted about a C of apple sauce and 1/4 C of OJ for the oil. I used 1/2 white and 1/2 brown sugar (1C each). I also added about a 1/2 tsp of nutmeg. I topped the bread with thin slices of apple for decoartion. Came out great and I'm by no means a baker!! Will definately make this again.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Absolutely awesome!!! Took another reviews suggestion and used the rub from the "blue ribbon ribs" recipe. Came out great! I don't use liquid smoke in the sauce but put a couple drops on the foil that I wrap the ribs with. I also add a little chipotle powder to sauce to add smokeyness to sauce. No need to go out for ribs, this is better than any rib place. Thank you Mr. Hibb!!!!!!!

Sweet Restaurant Slaw

Cut my own cabbage and carrots which made about triple the amount. I tripled everything except for the sugar (doubled) and it is delicious. Use apple cider vinegar. I'm serving it tomorrow but already know it's going to be a hit as my wife said the it was the best slaw shes ever had! Great recipe, definate keeper!!!

Cabbage Roll Casserole

I had extra cabbage (1/2 head regular and 1/2 head red) after making the Sweet Restaurant Slaw recipe, which I would highly recommend. Not knowing what to do with it I found this recipe and must say I'm glad I did. I used about a full head of cabbage and cut the rest of the ingredients in half except for the sauce. It seemed to need more rice when I was putting it together, which was a bit of a mistake as it got a little thick. Other changes were that I added more salt than called for and added a good amount of pepper. I also added a table spoon of worcestershire sauce and chili powder, and a tsp of ginger to the tomato sauce. When I pulled it out at the hour mark, I sprinkled in 2 T of brown sugar before mixing. I have made stuffed cabbage with a similar sauce. It came out great and my wife loved it! Thanks for the recipe.

Perfect Pumpkin Pie

Super easy and makes a great pie. I tooke the advice of a previous review and heated the pumpkin and spices prior to mixing everthing together. I'm not sure if it made a big difference as I've only made one other pumpkin pie before, but everyone one was impressed with the flavor. I sure keeper...Thanks!

Turkey Brine

WOW, WOW, WOW!!! This is a must keep recipe. I hosted my first T-giving yesterday and had both my parents and in-laws (seasoned veterians of the holiday) and everyone raved about the taste and moisture of the meat. My brother in law said it was the best turkey he's ever had. The only thing I did differently was added a few cups of apple juice. I used the Alton Brown method of cooking and carving the turkey and it came out beautifully. I also made the Alton Brown red wine gravy and the drippings made it very flavorful but you would not need to add salt to the gravy as the brine adds enough. My wife was a little sceptical about brining but was very impressed by the end result. THANK YOU for this recipe!!!

Fruit and Vegetable Pork

This was a great recipe. We lent our slow cooker to friends, so I used the suggestion to roast it for 40 mins on 350. Came out perfect! I also used 3 apples, 1 cup of sugar and a 21 oz can of sauerkraut undrained which helped keep the pork moist and tender. I will definately use this one again.
