About this Cook

My favorite things to cook
I love trying new recipes from this site. I love comfort food from all types of cusines. Probably the most favorite things are savory recipes.
My favorite family cooking traditions
Waking up to Thanksgiving turkey already in the oven. Looking back on it, my mother probably over cooked it a bit, but that's why they make gravy. Hoping to start new traditions with my own family. I never let a holiday go to waste...whether it's corned beef and cabbage or jambalaya, I always like to make things festive!
My cooking triumphs
My own chili is one of the more favorite dishes I make. Although, Coq Au Van was the first dish I made with the dutch oven I got for Christmas a couple years ago, and that came out really well. I guess the best "triumph" was hosting my inlaws and parents for t-giving two years ago. Made the turkey, dressing, pie, brussel sprouts and gravy...almost all from scratch. Okay, cheated on the pie, but still working on my baking skills. Came out great!
My cooking tragedies
Hmm, since I do 90% of the cooking in this household, I have more than my fair share of failures. Nothing too crazy though...it's not like I've poisoned anyone!!!

Cheesy Amish Breakfast Casserole
I have had this "as is", and I have made it with some variation. I'm giving this a 5 star because of its versatility. I just made this for a large group so made two casseroles. This is what I added: cooked two packs of bacon (cut up) and one "log" of breakfast sausage, cooked until brown, drained, and divided that between the two dishes. With the remaining fat in the pan, I sauteed onions, a red and a green pepper (diced) and a pack of mushrooms (sliced). It was received with rave reviews...I will definitely make this again!!

Mexican Bean Salad
Just made this for tomorrows picnic....AWESOME!!! Cut the oil to ~ 1/4 C and added two diced avocados. Came out great, can't wait to have more tomorrow! As with most recipes, using fresh ingredients makes it even better, so I squeezed one lime and half a lemon.

Mojo Grilling Marinade
I've used this on chicken and pork, and both came out GREAT! Excellent marinade and gives meat some bold flavors. No need to change a thing, a definate keeper!!!
