Baked Mushroom Thighs

I was searching for an easy and tasty dish using chicken thighs, and I was very pleased with this recipe. I recommend removing the skin from the thighs as the crumbs will stick better. I used reduced fat cream of mushroom soup and 8 oz of skim milk for a light version. I also recommend Italian seasoned bread crumbs for extra flavor. This is a nice dish served with flavored couscous and pinto beans. I highly recommend.

Coq au Vin

This dish made Julia Child famous. It is a mix of complex ingredients coming from simple foods -- use only the freshest ingredients for this dish. If you do not have a very large skillet, reduce the onions to 8 and the mushrooms to 8 as well. The bacon flavor is essential to this dish so I recommend frying a few pieces of bacon in place of the bacon bits. Use only a dry red wine that you would drink (and enjoy)-- I recommend a Pinot Noir for this dish.

Hummus III

This is a fabulous recipe! I found the tahini in my grocery store (large national chain). The flavors are really wonderful and this really does taste so much better than store bought hummus. Serve with blue corn chips and veggies for dipping. Thank you for sharing this recipe.

Chicken Breasts Pierre

This is really a great dish. My recommendations: use balsamic vinegar in place of white vinegar and use only 1 tablespoon of brown sugar. Next time, I will use red wine in place of the water (but this was still very good with the water). I omitted celery seed because I did not have any. Makes a very flavorful and healthy dish. I highly recommend. Serve with white rice. Blackeye peas make a nice side dish.

Sinless Mississippi Sin

This is a pretty good recipe. I left out the tomatoes at the end. I highly recommend finely chopping the artichokes before you add them. It makes the dip a lot easier to eat and makes the dish more appealing to look at.

Classic Spanish Sangria

This is a wonderful sangria recipe. I used Bacardi's spiced rum and decreased the fum amount to 1 cup. A glass punch bowl worked great for presentation. I also added a few large ice cubes to keep the sangria chilled. Your guests will love this!

Double Layer Pumpkin Cheesecake

This is a very good and very easy recipe. I used Libby's canned pumpkin for the puree and it worked great. Be sure the cream cheese it at room temp or the cream cheese so that it blends well. A delightful taste!

Guacamole

This is by far the best guacamole recipe I have tried. I put the peeled avocado and the onions in a food processor to finely chop. I recommend using Haas avocados, and I highly recommend this recipe.

Aunt Teen's Creamy Chocolate Fudge

This is a really good fudge recipe. I especially like the fact that it is so easy to make and requires no candy thermometer. I followed the recipe as it and it turned out wonderful. I do recommend storing the fudge, after it has cooled, in an air-tight container. Thanks for sharing this recipe.

Wonderful Raspberry Walnut Dinner Salad

I really like this recipe. It is very easy and looks lovely. I would recommend using a 6 oz package of the cranberries....and toss with only 1/2 bottle of the wonderful Raspberry Walnut dressing. I highly recommend.

Favorite Old Fashioned Gingerbread

This is really good. I recommend increasing the cinnamon and ginger to at least 2 teaspoons each. I personally like my gingerbread a bit more moist, so I will add a little bit more water next time (maybe an additional 2 tablespoons of water). I baked in a springform pan as well (9 1/2 ") and it was really pretty. You can sprinkle powdered sugar over the top for a nice presentation.

Mediterranean Salmon Cakes with Cucumber Sauce

We really like this recipe. I was not sure how the olives and chickpeas were going to taste, but it was wonderful. I used dry bread crumbs and had to use dried parsley. The red salmon makes a big difference, so don't substitute the pink salmon. There is not a lot of liquid, aside from the 2 egg whites, so the patties are a little dry when you pat them out....but this works out very well when they are cooked. I really recommend you try this one.

Chicken-and-Pasta Bake with Basil

This is a really good and very healthy recipe. I used a 16 oz. bag of frozen brocolli florets and the Short-Cuts roasted chicken (1 package). I also increased the bake time to 30 minutes and baked in a 2 quart casserole dish. If you cannot find the Asiago cheese...you can use Romano or even mozzarella. I highly recommend this dish for a quick, easy and yummy dinner.

Angel Chicken Pasta

I highly recommend this recipe. I used four chicken breasts instead of six, and had plenty of sauce for this amount. Be sure to buy the Condensed Golden Mushroom Soup and not Cream of Mushroom. Campbell's makes the Golden -- it just took some searching for it. I used Philly's soft cream cheese with chives and onions and it worked just fine. I also recommend using a good white wine. I will definately be making this again! Thanks for sharing.

This is a really good, simple recipe. It makes the perfect appetizer amount for two people. Be sure to chop the onions into small pieces....and red onions make a pretty color contrast.

Homemade Fresh Pumpkin Pie

This is a great recipe is you are looking for a true taste of pumpkin. I was happy to find a recipe for cooking fresh pumpkin other than baking. But don't expect this to taste like pumpkin pie from the can....it is not as sweet or spicy. If you are looking for a spicer taste, I would recommend increasing each of the spices by 1/2 tsp. This was a very fun recipe to make, and I will make again.

Chicken Enchiladas II

This is a wonderful recipe! I took the advice of others and made a few changes: substituted cream of chicken soup for cream of mushroom, added a few jalapenos peppers (used Ortega sliced jalapenos and diced them), added 1/8 tsp. of Cumin, added 1/4 cup extra of sour cream to the mix. I topped the final product with a bit of sour cream and some black olives, and served with Cheesy Mexican rice. My family loved. Thanks so much for sharing this recipe and for all of the great advice!

Cheese Biscuits I

This is a wonderful recipe. I read the other reviews and used 1/4 tsp garlic salt and 1/4 tsp of garlic powder for the topping -- they turned out great. Very easy to make and they look wonderful as well. I will definately make these again!

African Chicken Stew

I was hoping this would be better. I agree with the other reviews that the peanut butter is over-powering. The amount of pepper in this makes it very hot, so you might want to leave out the red pepper until right before serving so you can judge the amount. I would recommend this dish if you omit the peanut-butter. The chicken is very tender. Serve over saffron rice.
