Cheesy Tuna Melts

This is a great lunch sandwich. I took two English muffins, split them (so a total of four halves) and spread the tuna mixture on the four halves. I was in a rush, so instead of chopping celery, I used a dash of celery salt instead of regular salt. It was fast, easy and delicious for the two of us. I recommend sharp cheddar.

Chicken Enchiladas I

Follow the advice of the reviews on this one, and this is a great dish: Omit the water. Use 8 oz can of tomato sauce. I also recommend that you spray the pan with PAM before you put the enchiladas in it. I made these changes, and we loved this recipe.

Cinnamon Coffee Cake II

I made this for a baby shower and it was a huge hit. I cooked in a bundt pan and it fell a little, but I just sprinkled with powered sugar. I cut the oil to 3/4 cup and it was still extremely moist. It is very sweet so you might want to cut the brown sugar to 3/4 cup. I highly recommend this. It is really good.

Blackened Chicken

We really liked this recipe. I cut up four boneless chicken breasts into strips. You will need to double the amount of spices if you cook four chicken breasts. With the chicken in smaller pieces, the cooking time was right on. Serve over cooked fettucine noodles with the Quick and Easy Alfredo Sauce from this site. And I let the oil heat up for only three minutes. Worked like a charm. I highly recommend.

Quick and Easy Alfredo Sauce

This is a really good, and really easy sauce to make. I used skim milk and reduced fat cream cheese and the taste was excellent. The Parmesan did not melt completely. I might try cooking a bit longer next time. I recommend that you add 1/8 tsp. of nutmeg.

Chicken and Dumplings III

What a great and easy recipe. Following the advice from other reviews, I covered four skinless, boneless chicken thighs with one cup broth, two cups water, 1/2 of dry Chardonnay, three chopped carrots, two chopped celery stalks, 1/2 chopped onion and two smashed garlic cloves (which I later removed). It was creamy and flavorful. I highly recommend. And you only dirty one pot!

Day Before Mashed Potatoes

These are good. I made everything the same night so you do not have to make part of the dish the day before if you don't have the time. Trust your instincts as all potatoes are not the same size - add milk and/or more butter if they seem dry.

Pizza Pasta

I like this recipe. It is fast and easy to make. I would probably add a small can of chopped black olives next time. I used the 3.5 oz pack of pepperoni slices and cut the slices into 4ths. That worked well as the pieces were not too big and overpowering. I also put the cheese on top and I liked the crust-like top it made. Great dish for kids.

Big Soft Ginger Cookies

This are great cookies and easy to make. Perfect as is. I do recommend spraying your hands with cooking spray....this makes the cookies easy to roll and dip into the sugar.

Irish Chicken and Dumplings

Cut the potatoes into 8ths (they don't cook well if you don't). And be certain to chop the carrots and onions into bite size pieces -- you will spend your time eating cutting the pieces with a fork if you don't do this. Be absolutely sure the stew is boiling before you put the dumplings in (they will be soggy if you don't). 1/2 the dumpling recipe is plenty (recipe on the side of Bisquick box). You can reheat the stew the next night and make new dumplings.

This dish was very salty to me. I think it might be because I used a herb flavored stuffing mix. Be certain to buy, a plain, dry stuffing mix for the top.

Bourbon Balls II

This recipe did not work for us. The texture was too grainy. I recommend pulsing for 2-3 minutes in the food processor. We used Jack Daniels whiskey, and we thought they were too strong. I will probably make rum balls next time.

Rum and Sweet Potato Casserole

I like this dish. I think it is too sweet because of the sweetness of the rum combined with the cup of white sugar and cup of brown sugar. I recommend reducing the white sugar to 1/2 cup, and use a dark rum. The reason this dish is so good is the flavor of the dark rum. Light or white rum will just add sweetness, and not as much flavor.

Quick and Easy Shrimp Scampi

I agree with most of the other reviews, and suggest the following alterations: reduce garlic cloves to 3 for a good garlic flavor w/out it being too overpowering, use 1/2 lb pasta so your shrimp does not get lost, use 1/4 cup of breadcrumbs so you taste the shrimp and not the crumbs, and use the juice of 1/2 lemon so the lemon does not overpower the shrimp. Top with parsley after everything is mixed for a nice presentation.

Microwave Corn on the Cob

This is a fantastic, easy way to enjoy corn on the cob. I generally microwave 2 minutes, on high, per cob. It is fast, simple, and tastes the same as boiled corn. Be sure to wrap in the damp paper towels as this helps steam the corn.

Baked Spaghetti I

This is a good recipe. A few suggestions to make it taste more like spaghetti -- add 1 1/2 tsp. salt, 1 tbsp. of dried or fresh basil, 3 cloves minced garlic. This is a good comfort meal and should be well received by kids.

Fresh Salsa I

This is a really good recipe and much better than store bought salsa. It is a spicy, but a good degree of spicy. If you want to turn down the heat, decrease the jalepenos to 2 or seed the jalepenos after they cool down from roasting. I would not omit the peppers because the roasted taste makes the salsa. I have tried this recipe with less jalepenos and 'as is' because I was nervous it was going to be too spicy. I highly recommend 'as is'.
