Tomato Mozzarella Salad with Balsamic Reduction

I only made the balsalmic reduction as a dipping sauce for gorgonzola stuffed, bacon wrapped dates but the reduction was so delicious that I had to rate it. It would be amzing over mushrooms or steak.

Spinach And Tomato Filo Pastry Parcels

I made some serious modifications but it was a huge hit at a birthday party I had. 1)I left out the tomato sauce 2) I added garlic 3) I layered it in a casserole dish rather than made the little pockets.

Oyster Dressing (Stuffing)

MY boyfriend asked my to make oyster dressing because his moter used to make it when he was a child. I'm a tad nervous about oysters but this ended up tasting very good. I surprised myself.

Vegetarian Chickpea Curry with Turnips

I had lots of leftover Turnips from my winter crop so gave this a shot. I used a whole red bell bepper and turnip and well as WAY increased the spiciness factor. It was pretty good.

Mini Sweet Potato Samosas

I added sauted onion and garlic and I left out the onion packet mix (too easy and not creative enough). I added in a just a little tumeric and curry powder and baked them a bit longer than called for, for extra crunchiness. Lastly, I served them with three little bowls of sauces... dijon thinned with white wine, spicy BBQ sauce, and soy sauce. Delicious!

Pina Colada I

I didn't have any cream/half & half so I used all coconut milk. I also used lowfat because I think the full fat leaves an unpleasant taste in the mouth. The drink was super tasty on a hot Texas afternoon!

Group Effort Pasta

I made a few adjustments but overall it was very good. I sauteed the red bell pepper and spinach just a bit, I cubed the cheese, and added some crushed red pepper. Yum-O!

Vegetarian White Bean 'Alfredo' with Linguine

This was so creamy and wonderful. I added some grated parmesan on top and some black pepper and red pepper flakes. Delicious and definitely a keeper! Made me feel not so guilty about making alfredo and could be a good way to sneak some beans into a kiddo's diet.

Becky's Sugary Sugar Cookies

Despite the many nasty reviews I thought these cookies were pretty good. I'm still searching for the perfect sugar cookie recipe but this was great. I upped the vanilla to a teaspoon and liked that these cookies aren't overly sweet.

Herb Oyster Crackers

Seven Spiced Shark Steaks

Oh my goodness, this was sooo amazingly awesome. The shark simply melted in my mouth and the soy sauce carmelized into the fish. I will make this again and again.

Springtime Pea Salad

I didn'thave any cauliflower or sunflower kernals so I had to leave them out but otherwise this was very good. I took it to a potluck at work and got lots of compliments. I did use reduced fat ranch and sour cream and I used thick cut peppered bacon.
