Slow Cooker Teriyaki Pork Tenderloin

A new staple! This recipe is so incredibly easy! I have made it as-is and with modifications, and its always Delicious! I have learned, no need to brown the pork, throw it right in the crock pot. Cook on LOW for 4 hours. I used. To thicken the sauce at the end to make a gravy, but one day i didnt have chicken broth, only a can of pork gravy, so. I threw that in....and it was amazing! No thickening needed! I. Now only make it with canned gravy. I. Also have thrown in raw chicken....which also turns out well. This recipe. Is so good! I always use low sodium teriyaki sauce too. Try it!

Pumpkin Coffee Cake

Wow! This was great...even with my missing ingredients and substitutions! I listened to reviewers and doubled the pumpkin to a cup. I did not have sour cream, so I used a cup of Vanilla non-fat Greek Style Yogurt, and cut the white sugar in the cake to 3/4 cup. I didn't have any eggs, so I used 1/2 cup of egg beaters. I was out of salt too. This cake was moist & delicious, and it was missing some fat and calories! I will definitely make it again, my husband even thought it was awesome!

Tangy Apple Chicken Loaf

This was great! It tasted like a chicken dinner with all the fixins - all in one loaf! It was not - knock-me-down WOW (It IS chicken) - but it had enough flavor that it was great for kids and adults. The kids loved it. I could barely tell there were apples in it. I didn't have sage or celery, but I will be sure to get those for next time. I might also add in some craisins. I fine-diced the apples, onions and carrots before I read the directions. They all got sauteed for the same amount of time - which I am glad! Next time I will just buy the Mirepoix mix at the grocery store, and save the prep time. I also scaled the recipe to one pound, no problems there. There were no leftovers! I will definitely try this again!

Sunburst Lemon Bars

My first attempt at these I halved the entire recipe, and put in an 8x8 pan. I also made the crust and filling in my food processor (worked great!) I definitely needed more filling, so I added another 1/2. (Ended up with 1/2 the recipe with 3/4 filling.) Consistency was fine, but not as "lemony" as I would have liked, and I even added much more than originally called for. I think next time I will use lemon zest. I wanted a thicker "icing", so I piped it on, and added raspberries as decoration. They looked great - if only they tasted a little more like the "lemon" squares I was hoping for.
