Delicious Pumpkin Bread

Absolutely fabulous! I used only 1 cup of white sugar and 1 cup of brown sugar; also, substituted applesauce for 1/2 of the oil. Still very sweet and did not affect the moistness of the bread at all. Will make this again and again - plain, with walnuts, and with raisins.

Green Salad with Cranberry Vinaigrette

I loved this salad (my husband would have only given it a 3 or 4, but he likes VERY strong flavors!) I used dried cranberries instead of fresh since that was what I had on hand and put extra on top before serving it; also, used gorgonzola instead of blue cheese (what I had). Very tasty and not too strong.

Whole Wheat Pancakes

These were very good - I followed the recipe to a "T", except for using all wheat flour instead of wheat/white mixture. I didn't use it all the first morning I made it, so I saved the rest in the refrigerator and used it the next day - just as good!

Yum, yum, yum!!! Sooo sweet and chocolatey...the only thing I noticed is that it took less milk than called for in the recipe for the icing.

I would definitely recommend, as others have, making the graham cracker crust and pressing it into the bottom first. Otherwise, easy, gooey, sweet, and yummy!!

Greek Chicken Salad

This is yummy. My changes: omitted the olives (husband hates them), increased the cucumbers (too many from the garden!), doubled the feta, added about 3 Tbsp of mayo, a dash or 2 of dill, and used Gazebo Room greek salad dressing instead of italian. Tastes great in whole wheat pitas!

Chocolate Scotcheroos

My mom has been making this recipe (sort of) for years, but cuts down on the sugar, PB, and choc topping to decrease calories. When I make it, I follow this recipe to a tee (and say forget the calories!), because it is so yummy sweet and delicious. I don't know anyone that doesn't love these!

Shrimp Scampi Bake

If I could give this more than 5 stars I would because of excellent flavor and ease of preparation. Hubby and I loved it! Only changes I made were less butter (per other reviewers suggestions), used honey mustard because it was all I had available, put in a "glug" of white wine, and added a dash of cayenne pepper (gives it just a touch of heat).

Savory Deviled Eggs

I thought all deviled eggs were the same until I tried this recipe - yum! I used rice vinegar for a softer taste and, as others noted, needed an additional 2 Tbsp. mayo. I also did not think it needed any salt added at all, but overall, this is a keeper!

Dutch Letter Cookies

Dutch Letter Cookies??? My husband request these as he spent time out in Pella, Iowa freqently before we were married and discovered them in the Jaarsma Bakery on the square. I, however, had never heard of them so I found this recipe. He LOVED this recipe and said it was almost identical to the cookies he found in Pella. I found them easy to make; however, the only suggestion I would make is to make sure the almond paste/sugar/egg mixture is mixed very well and all the lumps are gone. Otherwise, you have trouble piping the mixture out onto the dough - very annoying.

Banana Banana Bread

This is the best good basic banana bread that I have ever made - I've come back to it and made it several times. I even buy extra bananas at the grocery store so they can go brown and I have an excuse to make this again! I use 1/2 ww flour and 1/2 white flour so I can feel better about eating it :) It does equally well as one whole loaf or divided up into smaller loaves(just adjust the baking time). I added mini chocolate chips the last time and YUM!! (even my mother-in-law wanted to take some home with her!)
