Baked Slow Cooker Chicken

Reviewed: Jan. 16, 2014
I agree that the chicken needs more seasoning. I massaged multiple spices with small pats of butter under the skin. I also put chicken broth in the bottom of the slow cooker and instead of tin foil, used potatoes and carrots. Very good when using these changes.

Grilled Zucchini II

Reviewed: Aug. 13, 2009
This is a tasty and super-easy way to use up all that extra zucchini from the garden. I cut the zucchini up like pickel sticks and they were easy to handle on the grill. Added shredded parmesan cheese on top while they were still hot enough to melt it. Even my husband, who "doesn't like" zucchini, took seconds. I found this idea at the last minute, so next time I will let it soak in the italian dressing longer.

Spinach Stuffed Chicken Breasts

Reviewed: Jan. 15, 2009
I loved, loved, loved this recipe, using prosciutto wrapped inside the chicken (instead of the outside). However, next time I will use very thin prosciutto slices and lessen the amount because my husband felt the whole recipe was too salty.

Curried Honey Mustard Chicken

Reviewed: Jan. 15, 2009
I really enjoyed this unique, slightly spicy flavor, hot out of the oven. My husband, however, was not wowed by it until he had leftovers for lunch the next day. Good stuff - I will make it again.

Dutch Letter Cookies

Reviewed: Jan. 1, 2009
Dutch Letter Cookies??? My husband request these as he spent time out in Pella, Iowa freqently before we were married and discovered them in the Jaarsma Bakery on the square. I, however, had never heard of them so I found this recipe. He LOVED this recipe and said it was almost identical to the cookies he found in Pella. I found them easy to make; however, the only suggestion I would make is to make sure the almond paste/sugar/egg mixture is mixed very well and all the lumps are gone. Otherwise, you have trouble piping the mixture out onto the dough - very annoying.

This is a wonderful, easy, impressive recipe for Baklava. I made it with my 15 year-old niece and she was impressed with her gourmet skills! Definitely a keeper.

Truck-Stop Buttermilk Pancakes

Reviewed: Nov. 19, 2008
LOWER FAT VERSION: Substituted low-fat yogurt for buttermilk, used less butter, and used WW flour for 1/3 of total flour mixture. Very, very good. I cut the recipe in half and still thought there was enough for a truck-stock!

Shrimp Scampi Bake

Reviewed: Nov. 14, 2008
If I could give this more than 5 stars I would because of excellent flavor and ease of preparation. Hubby and I loved it! Only changes I made were less butter (per other reviewers suggestions), used honey mustard because it was all I had available, put in a "glug" of white wine, and added a dash of cayenne pepper (gives it just a touch of heat).

Delicious Pumpkin Bread

Reviewed: Nov. 1, 2008
Absolutely fabulous! I used only 1 cup of white sugar and 1 cup of brown sugar; also, substituted applesauce for 1/2 of the oil. Still very sweet and did not affect the moistness of the bread at all. Will make this again and again - plain, with walnuts, and with raisins.

Green Salad with Cranberry Vinaigrette

Reviewed: Oct. 11, 2008
I loved this salad (my husband would have only given it a 3 or 4, but he likes VERY strong flavors!) I used dried cranberries instead of fresh since that was what I had on hand and put extra on top before serving it; also, used gorgonzola instead of blue cheese (what I had). Very tasty and not too strong.

Whole Wheat Pancakes

Reviewed: Aug. 24, 2008
These were very good - I followed the recipe to a "T", except for using all wheat flour instead of wheat/white mixture. I didn't use it all the first morning I made it, so I saved the rest in the refrigerator and used it the next day - just as good!
