Classic Peanut Butter Cookies

Excellent solid recipe. I didn't deliberately change anything...I used salted butter, cause it's what I had, and thus just added a dash of extra salt. I also didn't refrigerate the dough for the first batch because I was impatient. Oh and I only had creamy peanut butter. The results were a thinner cookie, but I wouldn't say they were too thin. It made the edges nice and crunchy but the middles were still soft. Next time I might sub half the butter with shortening to thicken them and enhance the chewyness, and I think they'd be lovely with salted peanuts on top rather than crunchy peanut butter.......but either way these are great as is and a great base recipe to fiddle with and fancy up a bit.

Fluffy Pancakes

This is, by far, the best pancake recipe I've found on here. The ONLY adjustment I made was adding more milk, because I found the batter to be a little to thick to cook right as is. Otherwise........these are tasty, and SUPER fluffy and delicious!

Cowboy Cookies III

This is the yummiest cookie I've gotten on this site, I'm in loooove. Since most other users cut the sugar, I did cut the white sugar to 3/4 cup. I also added a tablespoon of unsweetened cocoa, just cause I wanted mine extra chocolatey. I did not have any problem with them baking flat, in fact my first batch didn't bake through, but that could be my cruddy oven. In any event, these came out as the writer said........melt-in-your-mouth. Absolutely wonderful.

Sam's Famous Carrot Cake

AWESOME recipe but I tweeked it a little.. It was a little heavy on walnuts and light on raisins for my taste, so next time I'll probably halve the walnuts and maybe add a half cup more raisins. And a little tip, I soaked my raisins overnight in whiskey. Added a great touch. :)

Four Egg Yellow Cake

First off: I subbed butter for shortening because it was what I had on hand. The best part of this recipe is that it's quick, easy, and requires no odd ingredients. I was scrambling last minute to get a cake recipe and this was the first one I found that had stuff I always keep on hand anyways. The cake wasn't necessarily dry, but I can see how it would be probably better with the extra moistness that shortening provides. The flavor is just fine, lends itself well to frosting. The cake actually came out a slight dense sponge consistency, and seems like it would be really great for a layered cake. I will definitely keep this recipe on hand. Easy, quick, came out just fine.

Snickerdoodles II

PERFECT old fashioned snickerdoodle....exactly what you think of when you think of this cookie. Like other reviewers, I used butter instead of shortening. I assume they'd be chewier with the shortening...mine were fluffier inside, but still got crisp on the outside. As another reviewer said, I also just dipped the tops of the cookies into the sugar/cinnamon mixture rather than the entire cookie. My cookies didn't spread much in baking so I could flatten them a bit and sprinkle extra sugar mixture on top as well. Easy, yummy recipe I'll definitely use again.

Oatmeal Raisin Cookies IV

First off, the changes: Per the vast majority of the previous reviews, I added an extra egg to increase fluffiness/avoid flatness. With one extra egg they are slightly cakey. I prefer chewy cookies so might try adding some oil next time rather than egg. I added about two shots of whiskey and a dash of allspice to the mixture to soak the raisins in. I prepared these cookies without that step and they were definitely a little bland for me. Adding those made them more my taste. That said, this was a great easy recipe and made solid, old fashioned oatmeal raisin cookies that would probably lend themselves really well to taking some semi sweet chips in as well. Definitely a keeper.

Easy Sugar Cookies

So, I tried these with shortening rather than butter because it's what I had on hand (I know....I know...how could I not have butter in the house!?). They are a great sugar cookie and seem like they'd lend themselves really well to transitioning right into snickerdooles. With shortening, they are moister in the middle....I made flattened golf ball sized rounds and baked for 11 minutes and they were perfect....slightly crispy on the outside, chewy inside.

Banana Crumb Muffins

I went with the straight forward recipe and they were delightful. The topping really makes these muffins extra delicious. Moist, slightly buttery, yummy. Definitely will make these again.

Slow Cooker Chili II

This was my first chili ever and for a chili novice, I will say this was super easy and came out pretty good. My biggest change is that since I read the critiques of this recipe were that it was bland, I added two jalapenos. If you like heat, then that really kicked it up. I also added a can of corn to balance the heat with some sweet. I'm not entirely sure why celery is in here, I feel like it made the taste a little too stew like. I'd omit that if I make this again. I used a full cup of onions because I love onions in my chili and even that was pretty mild on the onion. I'd add more next time. I will be looking for ways to season this better without necessarily making it too hot, but I think this is a great base/starter recipe for chili, especially if you like it meaty.

Awesome Slow Cooker Pot Roast

This was my first attempt at the slow cooker and my first attempt at cooking a roast and it turned out GREAT. I used a smaller roast (3 1/2 lbs) and so it was a smidge dry, but still delicious. Impossible to screw this one up, I will probably add in more veggies next time.

Easter Breakfast Casserole

This is an excellent, easy casserole with the classic "breakfast" taste you want in this kind of dish. I followed the suggestion of a lot of the other reivews and put in a layer of the hash browns in and cooked those first, while I did that I cooked up my bacon. When the hash browns started getting toasty, I laytered the bacon on top. I don't know if it's a given or what but it seemed odd to me to but in strips of bacon, I cut mine up into pieces. At the store, the hash brown bags I found were all larger than what the recipe called for so and I had some left over. I put about a cup into the egg/milk mixture. I would add more onion next time, the bell pepper over powered the onion for me, but that's not too bad. And, I should have done what other reviewers did and salt and pepper the hash browns and/or the egg mixture before it went in. I used 1 cup of milk and it was plenty moist. I used 4 cups of cheese and it made for a really great cheesey top.

Coconut Curry Chicken and Peanuts

This recipe is wonderful! I'm not really a very good cook and even I couldn't screw this one up. :) I think the level of taste really depends on what kind of curry you use, and you could definitely spice it up with spicier curry. But, as is, it made for a great, light, tasty dinner. The sauce was delicious, I felt like I was in a restaurant. Put it over a bed of jasmine rice and you'd have a great dinner.

Amish Casserole

This is a good "starter" casserole recipe for, as others have said, building on. My husband agreed with most of the other reviews, it was too sweet for his taste. Personally, I wasn't bothered by it but I can also see how it would taste a little heartier with less sugar. The end result tasted like a less processed, healthier version of hamburger helper. When I make it again, I'll probably make the meat and the noodles and then just toss them together in the dish and bake as one big plain casserole with cheese on top. We used colby jack rather than american and it was really yummy, but you do need to use a lot. I agree with the other suggestions........more cream of chicken would make it creamier/tastier and I think next time I'll try adding onion to the meat and maybe tossing in some corn. All in all, a good easy starter casserole. A decent meal as is and a great recipe to build on later.

Chuck's Favorite Mac and Cheese

Very good, very solid homemade mac and cheese recipe. We did as others have said and added a cup of milk and halved the breadcrumbs, and it was great. Nice, comfort food, a little bit of kick with the sharp cheddar and sour cream but not so much as to offend picky eaters. Just a nice, solid, homemade tasting mac and cheese.

Cottage Cheese Chicken Enchiladas

Wonderful! We've made these a number of times, several times for dinner parties and they are always a huge hit. The chicken mixture is delicious. As the recipe is, it ends up being on the spicy side which we love, but you might try it with "medium" enchilada sauce to cool it down a bit. Either way, it's a really great dish, and we've never had left overs.

Sour Cream Cheese Casserole

Yum! This recipe was exactly what I wanted tonight...a cheesey, creamy comfort dish that was easy to make and would appeal to everyone. Make no mistake, this dish is not exactly healthy, but it is creamy and yummy and wonderful. We did as other reviewers have suggested and added a layer of cheddar right before we added the crushed craker topping. I'm sure it would have been fine without it, but it was extra yummy and savory with it. This is definitely going to be a "go-to" recipe for our family.
