Coconut Avocado Smoothie

I changed the recipe so that I could enjoy this! I used plain yogurt instead of vanilla, and soy milk instead of whole milk. I used equal amounts of ground coconut and water instead of cream of coconut. Then, I forgot to add the ice cubes! This turned into a smooth, rich smoothie! Wonderful recipe, even with my adaptations!

Grilled Beets in Rosemary Vinegar

Without a grill, I wrapped the beets in foil, and baked in a 350 oven for about 45 minutes. Wonderful!

Gluten-Free Hot Breakfast Cereal

I didn't bother to grind this up. I just put all the ingredients in a container and shook it up. Then I used 1/3 cup of cereal mix to 1 cup of water. My DD left her cinnamon flavored flax with me, and that made if smell really good as it heated up! Delicious!

No Fail Bean Pie

Great taste. I used soy milk instead of the evaporated milk, and changed the 2 1/2 cups sugar to 2 cups sugar and 1/4 cup pear butter, because I thought that the sugar amount was more than I wanted to deal with! The amount of filling was enough for 2 pies rather than one with a top crust! I baked the pies at 350 for 1 hr. 10 mins.

Looks good! Smells good! Easy to make! I did not put in the salt because we tend not to use any, and I think the seasoning is fine without it! Thanks for the recipe!

Baked Falafel

Easy to make, very flavorful! I didn't bake these, I just continued cooking in the frying pan. I used whole wheat flour instead of the all purpose flour.

Grilled Chipotle Sweet Potatoes

I cut a sweet potato into chunks, and then mixed everything in a plastic bag before spreading on a parchment paper lined cookie sheet. I baked these at 375 for about 20 minutes! Delicious! We will have to make some more soon!

Kale-Wrapped Dates with Almonds

So easy! Any kind of nut could go into the date, and instead of a whole almond, I preferred chopped nuts. I liked these without being secured with toothpicks. Great as a snack or as an appetizer!

Pumpkin Pecan Pancakes

These are delicious! Made them 2 days in a row! One time, I used 10 grain cereal for the crunch, the other time, I used oatmeal. The pecans add a nice taste and texture. I subbed honey for the sugar, and that is wonderful!

Knaakkebrod or Nakkileipa (Scandinavian-Style Rye Crisp Bread)

My problem was getting the rye meal! I finally decided to chop up rye berries! Other than that, the bread was easy to make! The taste and texture were great! This goes real well with a hearty soup. We will be making this again! Thanks for the recipe!

Sage Sausage Bread

I used the AR recipe for biscuit mix, and added 2 tsp. sage because I used turkey sausage. The recipe was easy to make, and tastes great! By using 2 8" pie pans instead of a 9x13 pan, I baked these for only 30 minutes.

Fluffy Gluten Free Cornbread

This is a very dry cornbread, but once you get used to the fact that gluten free is going to be different from a wheat flour product, it's fine! I tried to make my own millet flour. It didn't work well, so I used the millet anyway! I found that I had rice bran instead of rice flour, but it worked well for this! I made this thinner than the recipe by putting it into a 9x13 pan, and it was done in 20 minutes. Thanks for the great recipe!
