Golden Rice Cakes with Sweet Potato-Ginger Sauce

Either the directions were too complex, or I just wasn't into cooking when I made this! I shaped the rice cakes, using some of the sauce to form the patties. If left to cook too long, the cakes broke up, so a short cooking time was needed, which meant that they would not be golden. The sauce could have used twice as much ginger to make these outstanding!

Adas Polow (Persian Rice and Lentils)

The taste was good, but this was a challenge to make! The rice stuck to the pan so the presentation was awkward! I loved having the dates, raisins and onions cover the portion of where the rice wasn't!

Homemade Chili Seasoning Popcorn

The amount of oil for the popcorn was wonderful! I didn't have that oily feeling as I ate it! The heat of this was noticeable, but not overwhelming! I'll be making this again!

I'm glad I tried this recipe! The taste and appearance were quite interesting. I loved the heat of the cakes, and the fact that I could tone it down with a vegetable salad! I will be making this again!

Baked Indian Pudding With Maple Syrup

Omitting the brown sugar still made comfort food at it's best! Because of using custard cups, I baked my puddings in a pan of water. After 90 minutes, I turned off the oven, and left the puddings in a closed oven for the next 1/2 hour. That was plenty of baking time! Wonderful recipe---made on the day my wild roses bloomed out!

Blueberry Squares

I loved the idea of using garbanzo beans in these bars! I ended up not having as many berries as I thought I had, so used apples and pears to have enough fruit. The flavor is delicious! Thanks for the recipe!

Kohlrabi Bread

Wonderful taste! I used a combination of spelt and sorghum flours to make this bread, so my product wasn't quite like the recipe. This was my first experience with kohlrabi, and I loved it! Thanks for the recipe!

Delicious Gluten-Free Blueberry Corn Muffins

This makes more than 12 muffins, so I had a few extras (not that I minded). I used 1/4 cup honey in place of the sugar, and eliminated the vinegar. This is dewberry season (a wild growing vine filled with small fruit similar to blackberries), so I used them in place of blueberries. Yum!

Easy Rhubarb Pudding Cake

I made my own gluten free cake mix. Rhubarb and strawberries were used because I only had 4 cups of rhubarb. This is a wonderful recipe with a fantastic taste!

Apple Pie Oatmeal Breakfast

Just because it has apples doesn't mean that it will taste like apple pie! I figure that this should probably serve 6, not 12! This tastes good, and has lots of possibilities for additional flavors such as sweeteners or additional fruit. This can easily be made on top of the stove!

Zesty Garbanzo Beans with Pistachio Nuts

Instead of cayenne pepper, I used chipotle pepper seasoning, and instead of fresh thyme, I used the dried ground variety. These made a tasty snack Next time I will be inclined to find fresh thyme, though!

Aunt B's Peanut Butter Muffins

I have made this recipe twice since getting it. The first time, I forgot the baking powder, and they were like hockey pucks, but the taste was wonderful! The next time, I added cocoa powder for a chocolate peanut butter muffin---super!!! I used spelt flour as the only flour when making just the peanut butter muffins, and a combination of spelt and rice flours for the other ones. Both times, I used only 1/4 cup honey in place of the brown sugar. These were gobbled up right away both times! Thanks for the recipe!

Orange Cumin Vinaigrette

Easy to make! I subbed apple cider vinegar for te rice vinegar. Fabulous taste! I've made this twice since getting the recipe. It is great poured over cooked grains. This is wonderful as a dressing for sweet potato saad. I can't wait to try this on other exciting food combinations!

Kale Slaw

I used some grated beet for the red color when I discovered that I didn't have any red onion. Several pecans subbed for bacon because of being a vegetarian. This is more like a tossed salad than a slaw, which I think of as a cabbage salad with mayonnaise. By any name, this is a tasty salad!

I made this as a thick sandwich, using mayonnaise instead of cream cheese. I also tried this as an open faced sandwich, which I prefer more! Great idea for a breakfast sandwich!

Yam and Kale Wrap

This was good as written, even though I didn't care for the soy sauce with the kale.The spelt flour tortilla shells are a bit trickier to fold up than a flour tortilla, but the color, texture and flavor was real good!
