Loaded Black-eyed Peas, Spinach, and Vegetable Soup

Used parsnip instead of zucchini, but loved the heart warming flavors and ease of preparation to make! Great soup on a cold winter day, but I bet it would taste just as good at any other time! Thanks for the recipe!

Zestos' Chickpea and Grape Muffins

The flavors mingled when these muffins cooled down. I used spelt flour, honey , sou milk and minced garlic when making these. I thought the combination of sweet and herb would be too much, but found these to be quite satisfying! I'll be making these again!

Whole Wheat Applesauce Biscuits

I made these with spelt flour instead of whole wheat and honey instead of sugar. Great inspiration for light, fluffy biscuits! The dough was rising as I spooned these onto the parchment paper for baking! Delightful flavor and consistency!

Lentil Soup with Golden Beets and Rutabaga

Baked Sweet Potato Falafel

I used spelt flour instead of the kind called for. My mashed beans were a bit chunky. The flavor is great, and the ease of preparation was easy. Wonderful recipe!

Cocoa Oatmeal

I used oat groats, so my cooking time was a little longer than stated. I subbed chia seeds for the flax, and topped my cereal with pecans instead of walnuts. I loved my breakfast this morning! Thanks for the recipe!

Avocado Cheese Cake

I made my own self rising cornmeal mix using whole wheat flour. Then, I used the required amount of Greek yogurt when cutting the recipe in half! This is a light, delicate bread! It made a great breakfast treat!

I had to eliminate the dry milk for allergies figuring that when mixing batter, soy milk can be added later. This worked out fine in the recipe I used!

Jamaican Burgers

I used pinto beans instead of black beans, bell pepper instead of the hot variety, and brown rice instead of white rice. I loved the spiciness, and when not sharing with family members, I'll be sure to include the hot pepper! This is a wonderful vegetarian burger!

Bacon Sweet Potato Cornbread

I subbed soymilk for the buttermilk, so used baking powder instead of baking soda. Then I subbed smoked turkey for the bacon. This bread is sweet without being overpowering! This was moist enough so the bread was not crumbly! Great inspiration for a great tasting bread! Thanks for the recipe!

Even though I followed the recipe, my end product could not be cut into squares! I had to spoon the mixture onto the extra sugar, and roll the pieces around. These were easy to make, and have great taste! I'll have to make more!
