Hearty Breakfast Muffins

I used soy milk instead of yogurt, spelt flour instead of whole wheat, and raisins instead of cherries. I replaced the brown sugar with half the amount of honey, and found that these were VERY sweet muffins. I love the color, texture and taste of these moist muffins! When I make them again, I will plan of freezing some, as I'm sure they will freeze well! Thanks for the recipe.

Dark Guinness® Brownies

Super sweet, super rich fudgy brownies! The chocolate seems strong enough that the beer taste doesn't show up as strong as thought it might. When nothing but a chocolate fix will do, these are definitely the thing to serve! Thanks for the recipe!

Seared Scallops with Sweet Potato Soup

I cooked up the sweet potatoes when I made the vegetable broth. This was thick enough that flour was not needed. the ginger and cinnamon were fine when ground into the soup! There was enough spice without the cayenne pepper, so I didn't use it. This has great taste. If we can afford scallops again, I will be making this again!

Vegetarian Polenta Pie

I did not have instant polenta, so used cornmeal. It didn't thicken up real well, so next time I might use 1/4 cup less water if I'm using cornmeal. I love veggies, and could have stood many more of them in this pie, but I enjoyed it for what it was! This recipe lends itself to trying other vegetable combinations. Thanks for the recipe!

Cornmeal Millet Poppy Seed Muffins

I used spelt flour instead of all-purpose flour ,soy milk instead of cow's milk, and just eliminated the sugar. This made great muffins with a crunch! I'll be making these again!

Steel-cut Oatmeal with Toasted Pecans and Caramelized Bananas

I would have enjoyed this more if I really liked bananas! I substituted chia seeds for the flax. This is worth having again and again, but next time, I will used a fruit that I like. I will find my flax seeds, too, for the next time!!

Millet Pie

Great taste! I cut the amount of tamari sauce in half. The allspice, nutmeg and cloves provide an unexpected pleasure. I used steel cut oats, and Thanks for the recipe!those could be changed for rolled oats. This was too much filling for one 9" pie, so next time, I will make this a one crust pie in a casserole dish The kinds of vegetables can be varied, so I will be making this at other times with different ones. Thanks for the recipe!

Healthy Baked Steel Cut Oatmeal

This bakes up like a cake! I wasn't sure how to serve this. Like pancakes with butter and syrup or fancy with whipped cream! I decided on just plain, this time! When still warm, this has an overwhelming banana taste, but when cool, the flavors blend. Either warm or cold, this tastes good. It is a cake with the ease of cutting into, but the texture isn't light and fluffy like most cakes! I will be making this again!

Creamy Vegan Sweet Potato and Corn Chowder

Wonderful to have celery and ginger in this chowder! We enjoyed the blend of flavors. I did not peel the potatoes. I used my hand blender to mash part of the potatoes, and did not even need the flour for this thick hearty chowder!

Danish Rye Bread

Interesting way to make a sourdough bread! There was not enough flour in the recipe, this was still a sticky dough when putting it on the baking sheet. It baked up well, though! Great hearty bread!

Bitter Chocolate, Lavender, and Banana Tea Loaf

I changed the recipe for family preferences, so used spelt flour, honey instead of sugar, oil instead of butter and shortening, and dark cocoa instead of the chocolate. WOW! This is a sophisticated banana bread! I will have to more more tomorrow!

I had to change some of the ingredients to suit our needs, so used spelt flour, fried the onions in vegetable oil, and used pumpkin puree instead of sour cream. This is fantastic! I loved the idea of sprinkling with caraway seeds!

Loaded Black-eyed Peas, Spinach, and Vegetable Soup

Used parsnip instead of zucchini, but loved the heart warming flavors and ease of preparation to make! Great soup on a cold winter day, but I bet it would taste just as good at any other time! Thanks for the recipe!
