Brownie In a Mug

Reviewed: Jul. 9, 2013
I didn't want to bake these in the oven, and it was too cloudy to cook in the solar oven, so I steamed these. I doubled the recipe, using gluten free flour, and half the amount of honey as I would have used if I had used sugar. I steamed the double batch in 3 egg poaching cups.steaming for 20 minutes. They are heavy and dense with great flavor!

Cabbage, Peach, and Carrot Smoothie

Reviewed: Jul. 9, 2013
I substituted cherries for the grapes. The cabbage was quite noticeable, so next time I will cut down on that. Great way to start the day!

Maple Syrup Sugar Pie

Reviewed: Jul. 6, 2013
I made the recipe for tassie pie crust instead of the one written. As tassies, they took 20 minutes of baking time. This is sweet, maybe too sweet! Next time, I will try using white sugar instead of the brown sugar. A dallop of whipped cream might be what these need!

Shredded Apple Carrot Salad

Reviewed: Jun. 29, 2013
When eating pepper and garlic in an apple salad, this takes some getting used to! I liked this because it was not sweet, and the tang of the lemon and vinegar came out! I didn't have parsley, so used a bit of green pepper for an accent color. When pumpkins are in season, this will be wonderful to replace the carrots with pumpkin! This is a great recipe! Thanks!

Ginger Orange Brussels Sprouts

Reviewed: Jun. 29, 2013
The flavors go well together. I had to slice the Brussels Sprouts really thin to get that shredded look. Next time, I might just quarter them! When I have some, I'll give fresh cranberries a try in this recipe! Thanks for sharing it!

Pumpkin Gingerbread Cottage Pudding

Reviewed: Jun. 28, 2013
I used spelt flour instead of white, half the amount of honey as sugar, and soy milk. This cooked in 45 minutes,. Taste and texture (both the pumpkin filling and the cake) were good. This was a hit with my family, as it disappeared quickly.

Celery Almandine

Reviewed: Jun. 27, 2013
The taste is fantastic. It is very easy to put together once the nuts are shelled (I used pecans because I have them on hand!) The ginger adds to the flavor without distracting the taste or smell of the celery. I'll be having this again soon!

Sambusaks (Sumboosaks) with Chickpeas

Reviewed: Jun. 21, 2013
By making this gluten free, I could not roll out the dough and shape it. I found that I could roll each piec into a 4" diameter circle, then I baked it. It turned out to be a piece of good tasting bread with the beans and egg!

Peanut-Ginger Chickpea Curry

Reviewed: Jun. 21, 2013
I changed the recipe to what I had on hand. I used soy milk, but added coconut, and used crushed tomatoes. This was delicious! I'll be making it again. Hopefully next time, I'll be able to use diced tomatoes!

Chilled Sugar Snap Pea Soup

Reviewed: Jun. 16, 2013
Instead of a leek, I used an onion, and replaced the chicken broth with turkey broth. This has great flavor, with the gentle taste of mint being quite welcome!

Easy to make! I did not strain this; I just blended everything on high to create a smooth consistency. Delicious!

Cream Cheese Arepas

Reviewed: Jun. 16, 2013
This is good with vegan cream cheese! I actually used cornmeal instead of crn flour, and needed to increase the amount by 3/4 cup extra cornmeal. Wonderful taste! Thanks for the recipe! It reminds me of what a friend treated me to years ago!

Easy to make! Delicious! If using yellow curry powder, the amount could be doubled for a taste sensation!

Hermits with Wine

Reviewed: Jun. 15, 2013
I made these with gluten free flour, and used grated lemon peel instead of the extract. Because I had no brown sugar, I only used white sugar. I baked them at 350 for 12 minutes. These are delicious!

Gluten Free Tortillas

Reviewed: Jun. 5, 2013
This is tough to judge! Gluten free will taste different, and even cook differently. I just haven't adjusted my taste buds, though! This really has a "dry" taste to it. I could not cook this the same way I made whole wheat flour tortillas because this breaks apart if rolled out thin. If left thick, these 4" cakes couldn't be called tortillas. Either way, they fell apart when cooking! With a desire for gluten free tortilla shells, possibly substituting another kind of flour for some of the gluten free flour might help!

Granny's Veggie Spread

Reviewed: Jun. 5, 2013
This is like the recipe I have been searching for! I love all the vegetables! Fresh herbs might help season this more, but the flavor is fine Next time, I will mix the veggies in a bowl, letting the juices drain out for about an hour, then will add to the mayonnaise mixture. This was a little soupy for my liking, so I think that will help!

Tomato, Tuna, and Bean Salad

Reviewed: Jun. 5, 2013
I used red kidney beans in this. The flavors somewhat compete for attention, maybe the vinegar or the mustard should be reduced. More onion might have made this better. Overall, the taste was fine, but this didn't have a WOW factor.

Golden Rice Cakes with Sweet Potato-Ginger Sauce

Reviewed: Jun. 5, 2013
Either the directions were too complex, or I just wasn't into cooking when I made this! I shaped the rice cakes, using some of the sauce to form the patties. If left to cook too long, the cakes broke up, so a short cooking time was needed, which meant that they would not be golden. The sauce could have used twice as much ginger to make these outstanding!

Adas Polow (Persian Rice and Lentils)

Reviewed: May 29, 2013
The taste was good, but this was a challenge to make! The rice stuck to the pan so the presentation was awkward! I loved having the dates, raisins and onions cover the portion of where the rice wasn't!
