Peach Apple Salsa

I used white onion instead of green. The crunchy apple with the smooth avocado and peaches made this good! My jalapeno pepper was quite hot, so I appreciated the cool fruits! This is a great recipe during peach season!

Grandma Ashworth's Watermelon Pickle

I scaled down the recipe to make just a 1/2 pt. jar of these, using lemongrass instead of lemon. This is my kind of pickle, not overly sweet, with a spicy flavor!

Crisp Green Bean Salad

I used the tomatoes as a garnish. This is light and tasty! I loved the ginger for a surprise in this bean salad! The amount of soy sauce did not over power the salad, and I enjoyed it!

Watermelon-Cucumber Salad with Sushi Vinegar and Lime

No need to discard the mint leaves, they add a splash of color! Between the vinegars and lime juice, the sweetness of the watermelon is cut down so even some none watermelon people might enjoy this! (I did, anyway!)This would be a great picnic salad!

Super Quick Biscuit Squares

I made these with whole wheat flour and again with gluten free flour. Both turned out nicely. It's easiest to roll the dough between 2 sheets of parchment paper. remove the top sheet, and pick up the paper to put directly on to the baking sheet.

Beet and Cucumber Salad

I omitted the sugar, figuring that the beets were sweet enough! Great taste! The few crispy chunks mixed with the cooked beets is a good contrast! The color is pleasing! This will make a great picnic salad!

Brownie In a Mug

I didn't want to bake these in the oven, and it was too cloudy to cook in the solar oven, so I steamed these. I doubled the recipe, using gluten free flour, and half the amount of honey as I would have used if I had used sugar. I steamed the double batch in 3 egg poaching cups.steaming for 20 minutes. They are heavy and dense with great flavor!

Maple Syrup Sugar Pie

I made the recipe for tassie pie crust instead of the one written. As tassies, they took 20 minutes of baking time. This is sweet, maybe too sweet! Next time, I will try using white sugar instead of the brown sugar. A dallop of whipped cream might be what these need!

Shredded Apple Carrot Salad

When eating pepper and garlic in an apple salad, this takes some getting used to! I liked this because it was not sweet, and the tang of the lemon and vinegar came out! I didn't have parsley, so used a bit of green pepper for an accent color. When pumpkins are in season, this will be wonderful to replace the carrots with pumpkin! This is a great recipe! Thanks!

Ginger Orange Brussels Sprouts

The flavors go well together. I had to slice the Brussels Sprouts really thin to get that shredded look. Next time, I might just quarter them! When I have some, I'll give fresh cranberries a try in this recipe! Thanks for sharing it!

Pumpkin Gingerbread Cottage Pudding

I used spelt flour instead of white, half the amount of honey as sugar, and soy milk. This cooked in 45 minutes,. Taste and texture (both the pumpkin filling and the cake) were good. This was a hit with my family, as it disappeared quickly.

Celery Almandine

The taste is fantastic. It is very easy to put together once the nuts are shelled (I used pecans because I have them on hand!) The ginger adds to the flavor without distracting the taste or smell of the celery. I'll be having this again soon!
