No-Bake Energy Bites

Easy to make, but way too sweet! Maybe if I cut the honey to 1/4th the amount (I had used only 1/2 the amount)? Maybe if I had used something less sweet than chocolate chips? I'll make these again, but will need to change the recipe up a bit. I really like the idea of flax seed meal in these!

Whole Wheat Pita Bread

Even though I didn't care for the smell of the soy flour, these taste great! These burn quickly at the very high temperature! This is the first time I''ve made pita bread, and I think it went well!

Amazing Chocolate Quinoa Cake!

I cut the recipe in half, and used 1/4 cup butter instead of 3/8 cup, and 1/2 cup honey in place of the sugar. I completely omitted the chocolate chips. It took 40 minutes to bake in a 9" pie pan. This fantastic gluten free recipe was sweet and delicious!

Peanut Butter and Amaranth Cookies

I cut the recipe in half, using only whole wheat flour, but keeping the egg whole. I must have made mine smaller than yours (my yield with half a recipe was 3 dozen!), because they were done in the 375 oven in 8 minutes! I love the taste, texture and smell of these wonderful cookies!!!

Gracie's Amazing Vegetarian Burritos

Spicy and filling! Easy to make! I kept the onions, garlic, beans,and spices in one pan, while the rice and corn were in another pan. Then, I layered the bean mixture and the rice mixture onto the tortilla shells. Delicious!

Chocolate Plum Pudding Cake

I soaked the raisins in wine, then used the same wine to make a wine sauce to serve over the top. Instead of baking, I steamed my pudding cake for about 1/2 hour in antique Jell-o tin molds (they hold just a bit more than a poaching cup does). Steaming needs to be done in 2 batches (making 12 servings in all). The pudding cake was fine, but my idea of the wine sauce made it extra sweet! I am used to very spicy plum puddings, so will add more spices like allspice, ginger, and orange peel next time!

Spiced Cauliflower

I didn't have black mustard seed, so just used the jar labelled mustard seed. Because of no microwave, I steamed the cauliflower and added it to the onion mixture. This is a great tasting way to serve cauliflower!

10-Minute Chocolate Mug Cake

I used 1 T less sugar, and that was plenty sweet enough for us! Because of no microwave, I steamed this for 15 minutes each brownie. Wonderful idea when you don't want to be tempted by a pan full of brownies!

Indian Lentils and Spinach

I used vegetable broth in place of the chicken broth and fresh spinach in place of the frozen kind. I served this on rotini pasta. This smelled great, and tasted deliciously spicy! Thanks for the recipe!

Apple-Kraut Tuna Sandwich

I had to use store bought sauerkraut to try this, otherwise I would have used home made apple ginger sauerkraut. The mustard really kicks this sandwich up a notch! What a great combination of tastes! Thanks for the recipe!

Saharan West African Peanut and Pineapple Soup

I dried the pineapple, and that was great! The rest of the soup was easy to put together. I used cashew milk instead of cream, and had a creamy smooth texture with bits of vegetables. This is a marvellous soup! Next time, I will make my own peanut butter for this soup!

Spiced Popcorn Balls

I added 1/2 tsp. allspice just because! At first, I could not shape these into balls, and thought of spreading the gooey mixture onto a flat surface, and just nibble small bites of popcorn. After a while, I went back and was able to shape the mixture into balls! These are delicious!
