Whole Wheat Blueberry Beet Muffins

I'm reviewing this because it was the inspiration for the way I made these moist, delicious muffins! I used 1 1/4 cup sorghum flour and 1 1/4 cup rye flour instead of the wheat flour, I added an extra cup of oatmeal, omitted the soda and salt, and changed the sugar to honey. Next time, I will cut amount of honey to 1/2 cup because they were very sweet! I loved having beets in these muffins, that is a fantastic idea!

I was impressed with the orange taste! I left mine a little bit chunky when processing it. Next time, I might leave the seeds in the jalapeno pepper for some added kick!

Blended Berry Pancakes

I used fresh, not frozen berries, and made my own gluten free pancake mix. My pancakes could have used more moisture (when using different than wheat flour, that can be expected!), but the flavor was excellent! These are easy to make!

Beet Pierogies

Easy to make because of such simple ingredients. I used whole wheat flour for my pasta. I baked some and boiled some of the pierogies, and found that I preferred the boiled ones. Great taste! My family liked these, and I will be making them again!

Strange Flavor Eggplant Spread

Even though I cut the soy sauce to 1 T, it still was way too salty for my taste! I also cut the sugar to 1 T, and used honey. If all I had was 1 taste, I would have been fine. This does not get better with time! I want to like it, and will work to see if I can combine the garlic and ginger flavors with just a little soy sauce to make this eggplant spread more to my liking!

Hong Kong Mango Drink

Fluffy Gluten Free Cornbread

This is a very dry cornbread, but once you get used to the fact that gluten free is going to be different from a wheat flour product, it's fine! I tried to make my own millet flour. It didn't work well, so I used the millet anyway! I found that I had rice bran instead of rice flour, but it worked well for this! I made this thinner than the recipe by putting it into a 9x13 pan, and it was done in 20 minutes. Thanks for the great recipe!

Vegan Arepas Made with Polenta

I made this without the tofu or salt. The fruit in this arepa takes some getting used to, but is tasty! Next time for more color, I will use a red onion! Thanks for the recipe!

Kale-Wrapped Dates with Almonds

So easy! Any kind of nut could go into the date, and instead of a whole almond, I preferred chopped nuts. I liked these without being secured with toothpicks. Great as a snack or as an appetizer!

Squash Puppies

Very dry and crumbly as recipe is written. The size of the egg +/or squash may have made a difference, but I was happier by adding 1/4 cup of water to the mixture. Next time I will be adding herbs +/or hot sauce for more flavor! This is a great starter recipe that can be altered to please the tastes of those who try this!

Quinoa with Sweet Potatoes and Broccoli

I used amaranth instead of quinoa, green onions, fresh broccoli, and fresh garlic. I might have changed too much to make this an authentic review! I think I will fry the sweet potato along with the broccoli, onion and garlic next time. The texture of steamed sweet potatoes with the crunchiness of the grain and stir fried veggies left something to be desired. This tasted fine, but next time I will try adding ginger for additional flavor and cut back on the soy sauce!

Carrot Cake Oatmeal

I used oat groats instead of steel cut oats. The apple and raisins made this sweet enough without sugar. I made this dairy free, so avoided the butter and yogurt. This great spicy smelling cereal made breakfast fun!

Fruity Curried Lentil Salad

I used fresh pineapple instead of the canned, wild onions instead of the red onion, and had to omit the coconut. I cooked the quinoa and lentils up in water while I cut up the pineapple. Great taste combinations and great visual appeal. This is a salad that I'll serve often!
