Instead of strong coffee, I used instant coffee. These taste great. I just wish there was a better way to make the coconut stick on these!

Mayan Chocolate Chex® Mix

I didn't follow the directions! I just melted everything except the cereal together in a double boiler on the stove top, then stirred that mixture into the cereal. I used chipotle pepper powder instead of ancho chile powder. Great tasting sweet snack mix!

The taste is good! Be sure to grease the pan extra well! My bread fell out of the pan in 2 chunks! But who was counting? We were too busy sampling! Thanks for the recipe!

Sugar and Spice Cookies

I used oil instead of melted butter and a flaxseed/water mix instead of an egg. My cookies have a great spice taste. They also turned really hard, so they are the kind called coffee dunking cookies. If I had used the ingredients called for, the cookies would be better for most people, but every now and then, the changes that I make create a kind of cookie I wouldn't have if I hadn't changed the ingredients! Now I'll have 2 kinds of cookies for 1 recipe---the kind you intended when submitting the recipe and the kind I created with the changes! Thanks for the inspiration!

I made this with whole wheat flour, and cut the recipe in half. With that in mind, the baking time was decreased; my bread only took about 20 minutes! Great taste!

Potato, Parsnip, and Cabbage Soup

With the applesauce, this is on the sweet side! I think tht the next time I make this, I will use a Granny Smith apple to make the applesauce. There is great flavor combining the parsnips, cabbage and potatoes! Thanks for the recipe!

Apple Lasagna

I fried the apples instead of getting into canned pie filling. This went together easily. It looks good and smells terrific! I'm just not quite into noodles for dessert yet! The taste is delicious, though!

Easy to make! Very tasty! I used a spiced tea for this. I omitted the cilantro because I had none on hand, but can imagine the flavor would have made it better! Served over cooked millet, this was great!

Grandma's Unbaked Irish Soda Bread

I used this recipe for inspiration. I used spelt flour instead of all-purpose and used a vinegar-soy milk combination instead of buttermilk. This bread definitely needed a well floured surface to knead on!!! I kept the bread whole instead of quartering before putting on the frying pan. This produces a fine crumb bread, and was delicious!

Quinoa with Sweet Potato and Mushrooms

I used amaranth instead of the quinoa and button mushrooms instead of the crimini ones. Although I like the grain by itself and the sweet potato-mushroom combination, the two didn't really go together. I think the flavors were competing for attention in my mouth!
