Curry Split Pea Soup

I omitted the salt, and used a large tomato instead of 1 1/2 carrots when I cut this recipe in half. This has good flavor once you are used to the strength of the pepper!

Butter Bean Custard Pie

I changed the cream to 1/4 cup soy milk, lessened the sugar to 1 cup, and omitted the salt and flour. This is a great, almost pumpkin tasting pie! This would have been way to sweet with all the sugar in the recipe for my tastes! Great combination of flavors!

Pumpkin Brown Bread

I love Brown Bread, so now I have the idea to add pumpkin to the mixture. I made this more like Brown Bread, in that I used raisins, not nuts or cranberries. I cooked in 6 sprayed tin Jello molds, and steamed this for 20 minutes. Brown Bread doesn't need a filling, it's sweet enough already. Thanks for the inspiration!

Spelt Bread II

I used honey instead of sugar. The spelt flavor is wonderful, nutty and light! I baked 1/2 a loaf in a 400 oven for 25 minutes. Great flavor!

Chocolate Pie II

I cooked this up on the stove, and added 1/2 cup peanut butter to the pudding. This became a Chocolate Peanut Butter Pie. Then, I figured I had to use up the egg whites so I made a meringue to top the pie. Great pie!

Mock Coconut Pie (Spaghetti Squash Pie)

Great pie! I made this by adding 1/4 cup dark cocoa powder and about 5 drops of peppermint oil, while omitting the lemon juice, nutmeg and cinnamon. In effect, I changed this into Chocolate Mint Pie, but without the idea of a spaghetti squash pie, I never would have made this!

I used half white sugar and half brown sugar. After straining off the ginger, it was delicious to eat! When adding the water to make the drink, I found that a 4 to 1 ratio was best!

Coleslaw with Peas

Great tasting coleslaw! I will cut down on the dressing next time, but the taste was wonderful, so might just double the peas, cabbage and peanuts. I used raw peanuts in this; there is plenty of salt in the mayonnaise and mustard, so didn't need it in the peanuts. This is so good that I have already made it more than once!

Emmi's Banana Wraps

I used chocolate chips instead of the coconut. When making the tortillas, I flipped them, and placed chocolate chips on. By the time I had pulled it off of the pan, the chips had begun to melt, so I sprinkled the peanut butter mixture on, placed the banana on that, and rolled it up. Great treat! These might be really good with coconut and chocolate chips--that will have to be another day!

The only oil I used was spray oil, and I omitted the brown sugar. These were great! I've made this recipe several times since finding it. Great tasting sweet potato cakes!

Spelt Biscuits

because I used oil instead of butter, these made into drop biscuits! Great taste! They were not as heavy as whole wheat biscuits, and had a great texture. I'll be making these again!

Upside Down

I used broccoli instead of the cauliflower, and no meat. The flavors go well together. To save time, I roasted the broccoli while the rice, onions, and spices were cooking, so I served the broccoli on top of the rice. This was somewhat colorful. Now, I can't wait to try it with cauliflower!

Great tasting! I did not have that okra mucous nearly as bad by slicing lengthwise as I do when slicing in coin shapes! I did not use the oil, instead, I just sprayed the pan. I loved the taste of the lime in this! I will be making this again!

Chickpea Curry

I cooked up chickpeas and mung beans to use as the beans, then I used 1/4 tsp. ground cloves and 1 tsp. ground cinnamon instead of the whole spices, and cut the amount of cayenne pepper down. After all that, I found that I didn't have cilantro! But, the taste was OK!
