Herb Muffin Mix

The herb combination was different, but good! Since these are rather short muffins (might be because I used whole wheat flour), I'll double the recipe to make 12 muffins next time!

Apple Lasagna

I fried the apples instead of getting into canned pie filling. This went together easily. It looks good and smells terrific! I'm just not quite into noodles for dessert yet! The taste is delicious, though!

Easy to make! Very tasty! I used a spiced tea for this. I omitted the cilantro because I had none on hand, but can imagine the flavor would have made it better! Served over cooked millet, this was great!

Grandma's Unbaked Irish Soda Bread

I used this recipe for inspiration. I used spelt flour instead of all-purpose and used a vinegar-soy milk combination instead of buttermilk. This bread definitely needed a well floured surface to knead on!!! I kept the bread whole instead of quartering before putting on the frying pan. This produces a fine crumb bread, and was delicious!

Okra Fry

I used 2 cloves garlic instead of the asafoetida powder. I also used vegetable spray instead of the oil. This great tasting combination makes me want to make more soon!

Quinoa with Sweet Potato and Mushrooms

I used amaranth instead of the quinoa and button mushrooms instead of the crimini ones. Although I like the grain by itself and the sweet potato-mushroom combination, the two didn't really go together. I think the flavors were competing for attention in my mouth!

Butternut Squash Cajun Fries

Spicy from the Cajun seasoning and sweet from the squash---great combination! These are much easier to make than the normal kind of shake and bake roasted vegetables! Thanks for the recipe!

I omitted the salt, and used a large tomato instead of 1 1/2 carrots when I cut this recipe in half. This has good flavor once you are used to the strength of the pepper!

Butter Bean Custard Pie

I changed the cream to 1/4 cup soy milk, lessened the sugar to 1 cup, and omitted the salt and flour. This is a great, almost pumpkin tasting pie! This would have been way to sweet with all the sugar in the recipe for my tastes! Great combination of flavors!

Pumpkin Brown Bread

I love Brown Bread, so now I have the idea to add pumpkin to the mixture. I made this more like Brown Bread, in that I used raisins, not nuts or cranberries. I cooked in 6 sprayed tin Jello molds, and steamed this for 20 minutes. Brown Bread doesn't need a filling, it's sweet enough already. Thanks for the inspiration!

Spelt Bread II

I used honey instead of sugar. The spelt flavor is wonderful, nutty and light! I baked 1/2 a loaf in a 400 oven for 25 minutes. Great flavor!

Chocolate Pie II

I cooked this up on the stove, and added 1/2 cup peanut butter to the pudding. This became a Chocolate Peanut Butter Pie. Then, I figured I had to use up the egg whites so I made a meringue to top the pie. Great pie!

Mock Coconut Pie (Spaghetti Squash Pie)

Great pie! I made this by adding 1/4 cup dark cocoa powder and about 5 drops of peppermint oil, while omitting the lemon juice, nutmeg and cinnamon. In effect, I changed this into Chocolate Mint Pie, but without the idea of a spaghetti squash pie, I never would have made this!

I used half white sugar and half brown sugar. After straining off the ginger, it was delicious to eat! When adding the water to make the drink, I found that a 4 to 1 ratio was best!
