Savory Caribbean-Inspired Sweet Potato Cakes

The only oil I used was spray oil, and I omitted the brown sugar. These were great! I've made this recipe several times since finding it. Great tasting sweet potato cakes!

Spelt Biscuits

because I used oil instead of butter, these made into drop biscuits! Great taste! They were not as heavy as whole wheat biscuits, and had a great texture. I'll be making these again!

Upside Down

I used broccoli instead of the cauliflower, and no meat. The flavors go well together. To save time, I roasted the broccoli while the rice, onions, and spices were cooking, so I served the broccoli on top of the rice. This was somewhat colorful. Now, I can't wait to try it with cauliflower!

Great tasting! I did not have that okra mucous nearly as bad by slicing lengthwise as I do when slicing in coin shapes! I did not use the oil, instead, I just sprayed the pan. I loved the taste of the lime in this! I will be making this again!

Chickpea Curry

I cooked up chickpeas and mung beans to use as the beans, then I used 1/4 tsp. ground cloves and 1 tsp. ground cinnamon instead of the whole spices, and cut the amount of cayenne pepper down. After all that, I found that I didn't have cilantro! But, the taste was OK!

No Fail Bean Pie

Great taste. I used soy milk instead of the evaporated milk, and changed the 2 1/2 cups sugar to 2 cups sugar and 1/4 cup pear butter, because I thought that the sugar amount was more than I wanted to deal with! The amount of filling was enough for 2 pies rather than one with a top crust! I baked the pies at 350 for 1 hr. 10 mins.

Veggie-Bean Brunch Casserole

Very tasty! I just kept everything in the frying pan when I added the eggs, and put the lid on the pan instead of transferring to the oven. It worked great, and there was one less dish to wash!

Onion Flat Bread

When the onion, celery, and garlic powder started cooking, I decided to add some poultry seasoning for additional flavoring! These are great tasting, especially with cheese melted on the top! Thanks for the recipe!

Sugarplum Bread

I used honey instead of sugar, omitted the candied fruit, and used chopped dried pears to substitute for the raisins and candied fruit, and substituted sunflower seeds for the pine nuts. I made my own glaze recipe, and decorated with seasonal cherries. Delicious!

Mummy's Ginger Soup

I cut the butter in half, and omitted the oil. Instead of ap flour, I used whole wheat, and instead of whole milk, I used soy milk. This was an easy soup to make, and has a comfort factor to it! I put the soup in the blender so that the small pieces of ginger would be very tiny when eaten instead of straining the bits out. This is great any time of year!

I used a navel orange instead of mandarin oranges, only about 1/2 cup mayonnaise, omitted the honey, and used sunflower seeds instead of the pecans. Great salad!

I used almond milk instead of cream. This was wonderful on rice rotini! Because I really like hot peppers, next time, I might even try a habanero peppers instead of the jalapeno one! I loved seeing that bit of green in the sauce!

Sun-dried Tomato and Fennel Seed Hummus

Great smelling hummus, and I like the color, too! I had just finished drying my tomatoes when I tried some of them out in this recipe! I omitted the maple syrup because I thought it would be too sweet! This is delicious!
