Cinnamon Noodle Kugel

I made spelt egg noodles for this. Instead of sugar, I used honey to sweeten this. I omitted the topping, but sprinkle cinnamon all over the top once baked! It was a delicious hit that we enjoyed both as a dessert and as a breakfast meal! Thanks for the recipe!

Asian-German Fusion Potato Salad

Quick and Easy Oatmeal Muffins

I used this recipe as an inspiration. Because I used honey, the batter was too liquidy, so I needed more flour and oatmeal. I still didn't think there was enough batter to fill the muffin pans, so I mixed 2 T cream cheese with 2 T peanut butter, then filled partially batter filled cups with a dab of peanut butter filling, and covered with more batter. We loved the oatmeal tasting muffins! The recipe served as quite an inspiration! Thanks!

Irish Boxty

Because of being orange Irish, I used pumpkin puree instead of the leftover mashed potatoes in this! I chose to make these with rye flout. I omitted the oil, frying on a pan that had been sprayed. At first I thought them rather strange, but these are a comfort food, so I ended up really enjoying them!

Easy Salmon Brown Rice Pasta Salad

I added extra vegetables, using kale instead of spinach, and chopped tomatoes rather than cherry tomatoes. This is a great tasting salad.

Walnut Oat Brownies

I was surprised there was not flour in these brownies! Instead of the milk powder, I used creamer powder,cocoa instead of chocolate, 3/4 cup eggs plus 1/4 cup applesauce, and eliminated the walnuts. These are a great tasting brownie, even though they are on the crumbly side! I will make these again! By the way, I doubled the recipe, baking in a 9x13 pan. They took 25 minutes to bake in a 350 oven.

Cilantro Edamame Hummus

I didn't realize that soybeans came shelled or unshelled, so used 1/2 of a 28 oz. bag of unshelled beans, cooked them, and put the seeds into the blender. Instead of 1/2 cup tahini, I just used 1/2 cup sesame seeds. I did not add salt. This makes a pretty color green hummus! Great taste!

Red Wine Sesame Biscuits

I eliminated the salt. Instead of using an egg white to adhere the sesame seeds, I just rolled the dough into balls, and pressed into raw (not roasted) sesame seeds. These remind me of biscotti! Great cookies

Light Malt Loaf

Thick, dense loaf! I used honey instead of brown sugar, and used 1/2 water and 1/2 soy milk for the liquid, while omitting the dry cow's milk. Because of using only whole wheat flour, I didn't even use as much flour as the recipe calls for. Great taste!

Quinoa, Beet, and Arugula Salad

Colorful, tasty salad! I ran out of quinoa, so used mostly millet. I omitted the salt, and changed the arugula to spinach. We didn't need the cheese! I'll be making this again soon!

Chocolate Oatmeal Hermits

I used the whole egg, rather than the whites, omitted the salt, and doubled the amount of chips! Because I used whole wheat flour, it didn't surprise me that I didn't need the full amount of oatmeal called for. These are great little cookies!

With ginger in the name, there ought to have been a definite ginger flavor! This could have used about 3 times the amount of ginger called for. For all the effort, I think I'd prefer to make regular baking powder biscuits!

Easy Salmon Whole Wheat Pasta Salad

This is easy to make pasta salad that has too much dressing. I would have preferred that amount cut in half! The dill and onion flavors compliment the salmon nicely. Because I'm a vegetable lover, I added peas and celery to the cucumbers. Tomatoes make a great garnish!

These easy to make sweet potatoes are a great snack! I'll be making these again soon! If you want an interesting flavor to compliment the potatoes, add a sprinkle of chilotle pepper seasoning!
